15-MINUTE LENTIL SOUP

This is a fast, hearty soup for dinner; vegetarians can use vegetable broth.

15-Minute Lentil Soup image

Steps:

  • In a medium saucepan, heat oil over medium. Add onion, carrot, celery, and garlic; season with salt and pepper and cook, stirring occasionally, until onion softens, 3 to 5 minutes. Add broth; bring to a boil and cook 5 minutes. Add lentils and cook until soup thickens slightly, 3 to 5 minutes. Stir in vinegar and season with salt and pepper.

1 teaspoon extra-virgin olive oil
1/2 small onion, finely chopped
1 carrot, finely chopped
1 celery stalk, finely chopped

3/4 cup cooked lentils (from a 15-ounce can), rinsed and drained
2 teaspoons red-wine vinegar

Lentil and Sausage Soup image

Steps:

  • Place sausage in a large pot. Cook over medium high heat until evenly brown. Add onion, celery and chopped garlic, and saute until tender and translucent. Stir in lentils, carrot, water, chicken broth and tomatoes. Season with garlic powder, parsley, bay leaves, oregano, thyme, basil, salt and pepper. Bring to a boil, then reduce heat. Cover, and simmer for 2 1/2 to 3 hours, or until lentils are tender.
  • Stir in pasta, and cook 15 to 20 minutes, or until pasta is tender.

Steps:

  • In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes.
  • Stir in lentils, and add water and tomatoes. Bring to a boil. Reduce heat, and simmer for at least 1 hour. When ready to serve stir in spinach, and cook until it wilts. Stir in vinegar, and season to taste with salt and pepper, and more vinegar if desired.

Steps:

  • Sort and rinse lentils.
  • In a large saucepan, combine rinsed lentils and water.
  • In a small frying pan, or skillet, saute onion and garlic in the butter until onion is tender but not browned.
  • Add onion and garlic to lentils.
  • Stir in salt, pepper, sugar, Oregano, basil and parsley.
  • Bring to a boil; reduce heat.
  • Cover and simmer until the lentils are tender, about 45 minutes.
  • Add tomatoes and tomato paste.
  • Stir well.
  • Simmer 15 minutes longer.
  • Garnish each bowl with a parsley sprig, if desired.

Very Quick Lentil Soup image

Steps:

  • Put the lentils, one of the onions, and the garlic into a large saucepan with 4 cups of water.
  • Bring to a boil, then let simmer for about 30 minutes, until the lentils are very tender and pale.
  • Stir well to get a smooth texture.
  • Then add some lemon juice (start with 1 tablespoon) and some salt and pepper until it tastes just right, and serve.
  • If you want to make it spicier, fry the other onion in a little oil for about 10 minutes, until it's crisp and lightly browned; add the ground cumin and stir for a few seconds longer.
  • Pour this mixture over the top of the soup just before you serve it.
