FAT FREE SKILLET HOME FRIES
I love home fries but can't have them on my diet because they are fried. So, when I saw this recipe in the 'Eat Up, Slim Down' cookbook put out by Prevention magazine I wanted to put it here so I had it the next time the mood strikes.

Steps:
- In a large, heavy nonstick skillet, heat 1/2 cup broth to boiling.
- Add potatoes, scallions, onion salt, garlic powder, sage, pepper and paprika.
- Cover and cook over high heat 5 minutes, or until liquid is absorbed, turning potatoes occasionally.
- Reduce heat to low and cook 10 minutes, adding broth as needed until potatoes are tender and browned.

ALMOST FRIED PLANTAINS - VIRTUALLY FAT FREE
This is more a technique than a recipe per se. However, if you love the taste of fried sweet plantains but don't want all the fat, this is the way to go. For those less familiar with plantains, they would best be described as a cooking banana. These pair well with almost and Caribbean entree. For the best results, make sure you have a really ripe plantain one that is all yellow with a good number of brown spots. Though I have portioned this as a half plantain per serving, one could easily eat a whole one alone.

Steps:
- Peel plantain and slice 1/4 inch thick on a slight diagonal. This will give you oblong slices that are easy to handle while cooking.
- Using medium-high heat, pre-heat a non stick skillet.
- Place plantains in a single layer in the pan. Add water just until it covers the bottom half of the plantains.
- Reduce heat a small amount and cook 2 or 3 minutes until the water evaporates. Your plantains should begin to have a softer texture and more translucent quality.
- Lightly spray the tops of the plaintains with cooking spray and turn over. Cook an additional minute or so until you get a lovely, slightly crispy brown exterior on the plantains.
- Give the tops another quick spray of oil and turn over again. Cook the first side a minute or so until it too has browned a bit.
- Stop eating the plantains while you're cooking. :-).
- Serve.
EASY FAT-FREE SEASONED FRENCH FRIES
I just started making these, and thought I'd share since I didn't see anything exactly like it. Great for a individual snack!

Steps:
- Preheat oven to 450 degrees.
- Cover an 8"x8" pan with tin foil and spray with cooking oil and sprinkle on salt.
- Cut potato to desired wedge sizes.
- Place potato pieces into quart size bag and spray in some cooking oil and add the herbs.
- Shake until the pieces are coated evenly.
- Pour into the 8"x8" pan and add some more salt on top (I like mine really saltly).
- Place in oven and bake for 15-20 minutes for softer fries and 25-30 minutes for crispier fries.
- Enjoy with sauce of your choice!
VIRTUALLY FAT FREE FRIES
This is really a basic recipe, you can use whatever you like for seasoning. I use Mrs Dash seasonings, Italian seasonings, Garlic Powder, Cajun seasonings and other times I just make them with a little salt and pepper. This basic recipe contains roughly 0.2 grams of fat and 206 calories per potato.

- Preheat oven to 350°F.
- Spray foil covered cookie sheet with non-stick cooking spray.
- Mix bread crumbs with herbs and seasonings of choice.
- In a shallow bowl mix together the egg whites with milk.
- Dip potatoes into the egg/milk mixture and shake off any excess.
- Toss potatoes in with the bread crumb mixture.
- Place single layer onto a cookie sheet and sprinkle with salt to taste.
- Bake 30 minutes, or until bread crumbs turn goldish brown.
- Serve & Enjoy!
