My family loves this comforting chai tea latte recipe, especially on cold days instead of cocoa or when they're feeling under the weather. I simplified this chai tea recipe by using the filter basket of our coffeepot. It's delicious and great after dinner! -Julie Plummer, Sykesville, Maryland

- Place the tea bags, cinnamon, ginger and allspice in the coffee filter of a drip coffeemaker. Add water; brew according to manufacturer's directions. , Meanwhile, in a small saucepan, combine the milk, brown sugar and creamer. Cook and stir over medium heat until heated through and sugar is dissolved. Pour milk mixture into mugs; stir in tea. If desired, dollop with whipped topping and sprinkle with nutmeg.

- In a large saucepan, bring water and milk to a boil over medium heat, stirring occasionally. Add tea bags. Reduce heat; simmer, covered, 5 minutes. - Chill 1/3 cup (75ml) of the evaporated milk in the fridge until very cold.
- Combine remaining evaporated milk, tea bags, water and honey in a small saucepan over medium heat, simmer 5 minutes.
- Beat chilled 1/3 cup evaporated milk, sugar and vanilla until thick and frothy.
- Strain tea into warmed mugs.
- Spoon frothy mixture over top.
- Sprinkle with cardamom or nutmeg and chocolate shavings.

We don't have this chai latte mix in Australia but I was lucky enough to be given some in a swap and decided to check out the General Foods website and came across this recipe. Cool Whip is also not an Australian grocery line so I just topped mine off with some dairy whip (whipped cream in a can for non Aussie chefs)

- In a small saucepan over medium high heat, whisk together chai spices, 1 cup of oat milk and the tea bag and bring to a boil. Once boiling, remove it from the heat and allow it to rest for 1 minute. Then strain through a fine mesh strainer* into one or two mugs (one for a large latte and two for small).
- Rinse the saucepan. Add the remaining 1/2 cup milk and maple syrup. Heat the milk to 150 degrees Fahrenheit (measure using a thermometer): this is hot with some small bubbles forming around the outside, but not simmering. The exact temperature is helpful for getting the perfect foam (if you don’t have a thermometer you can approximate).
- Use hand frother, whisk, or French press to foam the milk. The French press is a favorite method: Add the scalding milk to the french press and pump vigorously until frothy, about 25 times. Do not overwhip, as the foam will deflate! (Go to How to Froth Milk for more.)
- Pour the milk and foam evenly between the mugs (or into 1 mug). Sprinkle with additional chai spices and serve.
