MEXI-MAC BURGERS AND WAFFLE FRIES WITH TACO SAUCE
I call my version of a Big Mac a "Big S'mack." This is my "Spicy Mexi-Mac." The patties are half beef, half chorizo. It's burger and fries with a south of the border twist. The secret to this flavorful burger is the mix of chorizo and ground beef, and just a few spices turn these frozen waffle fries into a zesty, spiced side.

- Preheat oven to 450 degrees F with rack above center.
- Gather your ingredients.
- For the waffle fries: Line a baking sheet with parchment, scatter the waffle fries and place in oven to cook 25 minutes. Give the pan a shake or the fries a flip once, midway. In a small ramekin, combine about 1 teaspoon salt, 1/2 teaspoon pepper, the cumin, chili powder, coriander and granulated garlic. Thinly slice the scallions. To serve, toss fries with spices.
- For the special sauce: In a small bowl, combine sour cream and ketchup. Remove the jalapenos from brine, place on cutting board and add a small splash of brine to sauce. Finely chop peppers and stir into sauce.
- For the burgers: Preheat large cast-iron skillet or griddle over medium-high heat.
- Peel and grate garlic and a quarter of the onion -- save the remaining onion for topping. Cut casing off from fresh chorizo and place in bowl. Add beef and season with salt, pepper, grated garlic and onion and Worcestershire sauce. Combine the sausage and beef. Score the meat into 4 sections. Form 4 meat patties thinner at center than the edges for even cooking. Drizzle the patties with oil.
- Chop the remaining onion and chop some lettuce, about 2 cups.
- Crisp the patties and cook 4 to 5 minutes. Flip the patties and top with a slice of both cheeses and cook another 2 to 3 minutes.
- To build burgers: bun bottom, onions, pickles, lettuce, patties, special sauce, bun top. Pile the fries alongside and top with taco sauce and reserved scallions.
- Add ice, mezcal, juices and simple syrup to a cocktail shaker. Shake or stir then drain into a highball full of ice. Top with a splash of seltzer.

NASHVILLE HOT CHICKEN AND WAFFLE SANDWICH

The waffle is tender and slightly sweet, which balances the spiciness from the chicken perfectly. The chicken is insanely crunchy on the outside with a slightly sticky, spicy glaze. The hot chicken and cold crunch of the slaw is perfect.

- Begin preparing chicken: place chicken thighs in a medium bowl. Add buttermilk and hot sauce and stir to coat. Cover and refrigerate for at least 1 hour, or overnight.
- Prepare waffles: combine waffle mix, water, egg, and oil in a medium bowl; whisk until well combined.
- Preheat the oven to 250 degrees F (120 degrees C). Preheat a mini waffle maker according to manufacturer's instructions.
- Spray waffle maker with cooking spray. Cook waffles one at a time until golden brown. Place cooked waffles on a baking sheet and place in the oven to keep warm.
- Finish preparing chicken: heat 3 inches of oil to 350 degrees F (175 degrees C) in a deep cast iron skillet or Dutch oven.
- While oil heats, combine flour, 2 teaspoons paprika, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon pepper in a shallow dish.
- Remove chicken thighs from the buttermilk mixture one at a time and allow excess to drip off. Coat chicken lightly in flour mixture and shake off any excess. Repeat the process once more, dipping chicken back in the buttermilk mixture and flour mixture, and shaking off any excess. Place chicken on a wire rack set inside a rimmed baking sheet. Repeat to coat remaining chicken.
- Fry 2 chicken thighs at a time in the hot oil until an instant-read thermometer inserted into the center reads 170 degrees F (77 degrees F), turning 2 to 3 times, about 8 minutes per batch. Drain chicken on a clean wire rack set inside a paper towel-lined baking sheet.
- Combine remaining paprika, garlic powder, salt, and pepper with cayenne pepper and brown sugar in a medium bowl. Carefully whisk in 1 cup of the hot frying oil. Brush each fried chicken thigh with the spicy oil mixture.
- Stir maple syrup into the remaining spice mixture.
- Place 1 piece of chicken on a waffle and top with 1/4 cup coleslaw. Drizzle with 2 teaspoons of the spicy maple mixture and place a second waffle on top. Repeat with remaining ingredients and serve immediately.

MAC 'N' CHEESE WAFFLE BURGERS RECIPE BY TASTY
Go big or go home! This burger is anything but simple-a burger patty is sandwiched between a mac 'n' cheese waffle bun. It gets even cheesier with a mac 'n' cheese sauce drizzled on top. - Make the mac 'n' cheese waffles: In a large bowl, combine the mac 'n' cheese, flour, garlic powder, paprika, onion powder, cayenne, salt, black pepper, eggs, and cheddar cheese. (If you are using cold mac 'n' cheese, microwave briefly to loosen up for easier mixing). Mix well to combine.
- Heat the waffle iron to medium-high heat or 375°F (190°C).
- Scoop ¾ cup of the mac 'n' cheese mixture into each of the waffle divots. Close the waffle iron and cook for 8-10 minutes, until the waffles are golden brown and crispy all over. Remove the waffles from the iron (cutting into individual waffles with kitchen shears for easier removal) and repeat with the remaining mac 'n' cheese mixture. You should have 8 waffles total.
- Meanwhile, make the burger sauce: In a medium bowl, mix together the mayonnaise, ketchup, onion, sweet relish, white vinegar, and salt. Refrigerate until ready to use.
- Make the cheese sauce: In a small saucepan, melt the butter over medium-low heat until bubbling. Whisk in the flour and cook for 1-2 minutes, until light golden brown, whisking continuously to prevent burning. Pour in the milk, whisking continuously to prevent clumping. Cook for 2-4 minutes, whisking occasionally to prevent burning, until slightly thickened and steaming. Remove the pot from the heat and whisk in the cheese and salt until melted and smooth.
- Transfer the sauce to a 2-cup liquid measuring cup and use an immersion blender to blend until completely smooth. Set aside until ready to use.
- Make the burgers: Heat a large cast-iron skillet over medium-high heat until smoking. Generously season the ground beef patties on both sides with salt and pepper. Cook the patties for 4-5 minutes on each side, depending on your desired doneness.
- Assemble the burgers: Spoon 1-2 tablespoons of the burger sauce onto a mac 'n' cheese waffle. Top with 2-4 pickle slices, ½ cup shredded lettuce, a burger patty, ¼-⅓ cup cheese sauce, 2 slices of bacon, and another mac 'n' cheese waffle. Repeat to make the remaining burgers.
- Serve immediately.

WAFFLE BURGER
I was bored one day and decided to try making a sweeter burger, so I instantaneously thought of waffles and syrup, then went from there to create this wonderful delight. Though not as sweet as originally intended it's still a wonderful addition to my cookbook.

- Prepare the burger in preffered manner.
- Melt cheese on burger, or place it on after the burger is done.
- When burger is nearing completion, toast your waffles, so both will finish at about the same time.
- Pour half of the desired maple syrup measurement ontop of the bottom waffle.
- Place lettuce on bottom waffle.
- Place patty ontop.
- Place the pepperoni slices evenly above the burger.
- Pour the other half of the maple syrup ontop.
- Top it off with the second waffle.
- Enjoy.
