WAKE-UP CASSEROLE - CANADIAN BACON
The original recipe is delicious, but this is my healthier version, with less fat and calories. It also freezes beautifully and individual portions can be reheated in 3 minutes in the microwave. As a single person, I can't eat 8 portions at one sitting, so I divide and freeze. But it's great if family visits, because I can have the portions ready to reheat, and it's also great if you're in a hurry in the morning and don't have time to cook before heading off to work.

You'll find everything you want for breakfast--potatoes, eggs, cheese and ham--in this satisfying casserole from Iris Frank of Eureka Illinois. "It can be made the night before and kept in the refrigerator," she comments. "I frequently make it for church potlucks and for company. Everybody loves it."

WAKE UP CASSEROLE
My four kids went to visit my aunt and uncle in Wisconsin and came home ranting and raving about this great breakfast! I convinced my aunt to send the recipe and it is so easy and yummy! Also so easy to adapt to whatever you have in the fridge, onions, mushrooms, broccoli, sausage, etc!
