Balsamic Chicken Cutlet over Spinach Salad with Mushrooms, Bacon and Warm Shallot Dressing image

Steps:

  • Coat chicken with balsamic, oil, seasoning and rosemary and set aside. In a skillet, add chopped bacon, work in 2 batches if preparing salad for 4. Brown bacon over medium high heat, then transfer the bits to a paper towel lined plate to drain. Using center cut bacon will cut down on the pan drippings that spatter.
  • Coarsely chop spinach leaves and add to salad bowl. Top with mushrooms, radishes, scallions. Season salad with salt and pepper.
  • Wipe out the bacon pan and return to stove turning heat back to medium low. Add 1 tablespoon oil for your dressing and shallots and reduce heat to medium. Saute shallots for 3 minutes. Remove oil and shallots from heat.
  • In a bowl, combine mustard and balsamic vinegar. Stream in 2/3 cup oil slowly while whisking the dressing to emulsify it. Add warm shallots and toss with spinach salad to coat evenly. Add cooked bacon and toss again.
  • Preheat a nonstick skillet over medium high heat. Cook chicken cutlets, 4 minutes on each side, in a single layer. Slice breasts on an angle on your cutting board once they are all out of the pan. Pile spinach salad on to dinner plate/plates. Top each salad with 2 sliced chicken cutlet pieces. For individual portion follow the above method.

1 1/2 pounds chicken breast cutlets (sometimes marked "thin cut")
2 tablespoons balsamic vinegar, enough to just coat the breast slices
3 tablespoons extra-virgin olive oil, just eyeball it
Grill seasoning blend, or coarse salt and pepper

This salad is simple, nutritious, and delicious!! A simple twist on an everyday salad especially the balsamic vinegar . I made this for my mum, and mother in-law also for myself . We thoroughly enjoyed it , so folks from my table to yours hope you like and enjoy as much as we all did .... Why not add to this some crispy bacon it really adds to the flavour the day I made this I realised I forgot to buy bacon , but it was still delicious ... :)

Warm Chicken Salad with Balsamic Vinegar image

Steps:

  • prepare all the vegetables , place the peeled and diced potatoes into a steamer (double boiler)and let steam for 8 - 10 minutes so the potatoes become a little tender . we don't want them too soft at this stage just part cooked .
  • place a large pan over a medium heat ,pour in the tablespoons of oil . To that add the part cooked potatoes and fry for 3 to 4 minutes until the potatoes cook fully and start to crisp up around the edges..
  • Then add to the potatoes all the prepared vegetables and cooked chicken and cook for a further 5 minutes till all the vegetables are tender . Add a little salt and pepper to season.
  • While everything is in the pan, start to get your plates ready , with the fresh rocket salad leaves. Grab a hand full of rocket leaves and place on your plate then drizzle 1 tablespoon of balsamic vinegar over them . Then on top of that place your warm chicken salad from the pan and add an other drizzle of balsamic vinegar over your chicken salad and to finish it off nicely, a drizzle of truffle oil . This adds great rustic flavour . And there you have a delicious mouth watering warm chicken salad ..enjoy.... :)

1 - 400g of cooked chicken breast pieces
1 - large white onion (skin removed and sliced)
1 - red pepper (seeds removed and sliced)
1 - green pepper (seeds removed and sliced)
1 - small chilli ( removed seeds and chopped finely)
5 - large mushrooms (washed and diced)
2 - cloves of garlic (chopped)
- pinch of salt and cracked black pepper to season
2 tablespoon(s) balsamic vinegar
1 bag(s) peppery rocket leaves (prewashed and ready to use)
5 - meduim potatoes (peeled and diced not to small of pieces)
2 tablespoon(s) grapeseed oil
FINISHING TOUCH

Balsamic Chicken Salad image

Steps:

  • Combine 1/3 bottle of balsamic vinaigrette dressing with the chicken tenders in a bowl. Toss together sliced mushrooms with 1/3 bottle of dressing in a separate bowl. Reserve the remaining 1/3 bottle. Allow the chicken tenders and mushrooms to marinate for at least 30 minutes.
  • Preheat the oven's broiler, and set the oven rack about 6 inches from the heat source.
  • Remove the chicken tenders and mushrooms from the marinade, and drain off the excess. Broil the chicken and mushrooms until the chicken is browned and cooked through, 5 to 8 minutes. Remove the chicken and mushrooms from the heat, and slice the chicken tenders into bite-sized pieces.
  • To serve, divide the chopped romaine lettuce between four plates, and top each with broiled chicken and mushrooms. Sprinkle each plate with cherry tomatoes, mozzarella cheese, and sliced basil leaves; serve with the remaining vinaigrette dressing.

This salad is a perennial favorite at Freds, the glittery see-and-be-seen restaurant inside Barneys New York. The recipe calls for a whole roasted chicken, so you'll need to build in time to allow one to cool after roasting, or you can use leftovers or a store-bought rotisserie chicken instead. Freds' Chicken Salad With Balsamic Dressing image

Steps:

  • Roast the chicken (if you're using a cooked, store-bought chicken, skip this step): Heat oven to 350 degrees. Place a rack in a roasting pan. Rub 1 tablespoon salt around the inside of the cavity, then stuff it with the thyme, lemon and garlic. Tie the legs closed with cooking twine. Rub olive oil over the entire bird, and sprinkle with 1/2 tablespoon salt and the black pepper. Place on the rack and roast for 72 to 80 minutes. After 72 minutes, begin testing for doneness by inserting a meat thermometer into the leg, close to the bone. The chicken is done when the thermometer reads 165 degrees. Remove from oven and set aside to cool.
  • When cool enough to handle, remove the skin from the chicken. Use your hands to remove all the meat (remember, it will be hotter internally) and shred into 2-inch strips. If you're not going to make the salad for a few hours, place the meat in the refrigerator, but be sure to remove it and let come to room temperature for 30 to 45 minutes before serving, to bring out the best flavor.
  • Make the dressing: Place all the ingredients except the oil in a food processor and pulse for about 30 seconds, until everything is combined. With the machine on low, slowly drizzle in the oil until dressing is emulsified.
  • Assemble the salad: Drizzle pears with lemon juice to prevent them from browning. In a large mixing bowl, combine pears, greens, beans, tomatoes, onion, avocado and half the chicken meat. Add some of the dressing and toss to make sure everything is lightly coated, adding more dressing if needed. Divide the mixture equally among 4 or 6 plates. Lay the rest of the chicken on top and serve immediately, passing the remaining dressing in case people want to add more.

I was looking for a way to use my expensive Balsamic Vinegar and Goat cheese. Here it is! You can substitute any greens in this salad, it really seems to be the vinegar that makes the salad. I tried putting some raw mushrooms in this and it didn't go too well, I've also tried adding raw tomatoes to the end product of this salad as well as the cooked ones and that seems okay. If your kale is too bitter or weird add a smattering of salt or lemon juice. If you don't have white wine add whatever (decent) wine you have. You don't have to use fresh ground salt and pepper but I always do.

Warm Balsamic Vinegar Chicken Salad With Goat Cheese image

Steps:

  • Heat Olive oil on low - medium heat for about two minutes, before shimmering add onions, cook about one minute and add garlic, chicken, pepper and salt. Cook until chicken is mostly done then add wine, vinegar and chicken broth, cook three or four minutes until everything is well mixed and heated, add tomatoes (if using fresh tomatoes add them and broth).
