MUSHROOM AND LEEK SPRING ROLLS

Mushroom and Leek Spring Rolls image

Steps:

  • In a hot wok or saute pan add the oil followed by the garlic, ginger and chile. Be careful not to burn. Add the hoisin and briefly saute to get the raw taste out. Add the shiitakes, leeks and bean sprouts. Check for seasoning. Let cool in a strainer and drain well. When cool, add the cilantro, scallions and bean thread. Lay out a lumpia wrapper with corner facing you. Place a small mound at the bottom, moisten edges with eggwash and roll bottom corner towards the middle. Fold in both sides and continue rolling. Finish roll and let rest. Deep fry at 350 degrees until golden brown, about 5 minutes. Serve with mint dipping sauce.
  • Mix all ingredients in a small bowl.

2 cups sliced shiitake mushrooms
1 cup sliced button mushrooms
1 cup sliced cepes, chanterelles or oyster mushrooms (optional)
2 cups leek julienned
1 cup bean sprouts
1/2 cup hoisin sauce
2 minced serrano chile
1 tablespoon minced garlic
1 tablespoon minced ginger
2 tablespoons canola oil
1 cup chopped scallions
1/2 cup chopped cilantro
1 (4 ounce) package bean thread (rice vermicelli), blanched, refreshed and cut up
Salt and black pepper to taste
1 package lumpia wrappers. Other types are egg roll and spring roll wrappers. I prefer lumpia.
Eggwash (1 egg and 1/2 cup of water)
1/4 cup fresh mint chiffonade
1 teaspoon sugar
1/4 cup thin soy sauce
Juice of 1 lemon

Yummy Spring Rolls With Shitake Mushroom Filling image

Steps:

  • Mix the cornstarch, soy sauce, and 1/3 cup water in a small bowl. Set aside.
  • Heat the oil in a wok or a wide skillet. When a haze appears, add the mushrooms, scallions, ginger, and carrot and stir fry for about 3 minutes. Add the cabbage, sprinkle with 1 teaspoons salt, and stir fry until bright green and starting to turn limp, about 2 minutes.
  • Stir in cornstarch mixture and stir fry until the veggies are coated and the pan is dry, 1-3 minutes. Turn off the heat. Taste for salt and move the vegetables to a bowl to cool.
  • Form the spring rolls by laying the egg roll wrapper on the counter at a diagonal, with a corner facing you. Heap 2 tbls. of the filling crosswise, near the base. Cover it with sprouts before rolling. Fold up the lower corner, fold in the outer corners, then wrap. Repeat, using the rest of the filling. Place the egg rolls on a plate and cover with wax paper, then with plastic, until ready to cook.
  • To cook, heat 1/2" peanut oil in a medium skillet until hot enough to quickly sizzle a corner of an egg roll. Add two egg rolls and fry until golden, about 2 minutes. Turn and fry the second side, then remove to paper toweling to drain. Continue frying the rest. Serve hot with or without dipping sauce. Enjoy!

  • Cut asparagus spears in 1/2 lengthwise, 7 into 1 inch pieces.
  • Melt the butter in wok& add the shallots& ginger.
  • Sauté until just tender.
  • Add the asparagus& mushrooms.

Fresh Mango-Lobster Spring Rolls image

Steps:

  • Combine fish sauce, wine or sherry, 1 1/2 teaspoons ginger, and cilantro leaves in a medium bowl. Add lobster; toss to coat. Cover and marinate in refrigerator for 30 minutes.
  • Heat oil in a large cooking pan over medium-high heat and swirl to coat pan. Add green tea and saute until fragrant, about 30 seconds. Add remaining ginger and saute another 30 seconds. Add lobster mixture; stir and toss until it heats through, about 1 minute. Remove from heat. Let cool, then mix in mango.
  • Fill a medium bowl with warm water. Dip one of the wrappers in the water for 15 seconds, or until softened. Carefully transfer it to a dry work surface.
  • Arrange 2 to 3 tablespoons of the filling in an even horizontal mound just below the center of the wrapper. Roll up the rice paper to form a tight cylinder, folding in the sides about halfway. Assemble the remaining spring rolls the same way.
  • Cover finished rolls with a damp cloth to prevent them from drying. Serve fresh rolls whole or cut in half, with Sweet-and-Sour Chili Sauce.

Baked Asparagus With Shiitake, Prosciutto and Couscous image

Steps:

  • Heat oven to 200 degrees. Line a baking sheet with parchment paper (it should be twice as long as the pan). Lay asparagus in a pile in the center. Scatter mushrooms and prosciutto on top. Drizzle with 2 tablespoons oil and season with 1/4 teaspoon salt, the pepper and nutmeg. Toss vegetables to coat evenly. Lay tarragon over top.
  • Fold parchment to completely enclose vegetables, and staple top and sides shut (or tie up with string). Transfer pan to oven and bake for 1 hour. Asparagus should be just cooked through. If too crisp, return to oven until done to taste.
  • In a small pot over medium-high heat, bring 3/4 cup plus 3 tablespoons water, 2 teaspoons olive oil and remaining salt to a simmer. Stir in couscous and remove pot from heat. Cover and let stand for 5 minutes. Fluff with fork.
  • Spoon couscous onto serving plates and drizzle with oil. Divide prosciutto and vegetables, and their juices, among the plates and serve.

Roasted Asparagus & Shiitake Mushrooms image

Steps:

  • Preheat the oven to 450 degrees.
  • In a large bowl, toss the asparagus and the mushrooms with the olive oil to coat (adding a little more if necessary).
  • Sprinkle with the coarse salt.
  • Spread the vegetables on two cookie sheets so they are not touching.
  • Roast for about 20 to 25 minutes, shaking the pans occasionally so that the vegetables do not stick, until the asparagus is nicely browned and the mushrooms are cooked through.
  • Remove the pans from the oven and arrange the vegetables on individual plates or a serving platter.
  • Drizzle with the balsamic vinegar and season with the salt the pepper to taste.
  • Serve warm or at room temperature.

SHANGHAI PORK, BAMBOO, AND MUSHROOM SPRING ROLLS

There are numerous fillings for fried spring rolls, and this one is my take on an old-fashioned Shanghai filling. The surf-and-turf combination of pork and shrimp is punctuated by earthy bamboo shoots and shiitake mushrooms. Whereas the Cantonese filling on page 79 is savory-sweet (and can be used here), this filling is more robust and offers wonderful depth, so much so that dunking them in a touch of vinegar is all you need to create a wonderful mouthful. Most spring roll fillings are cooked first because the frying is fast, and you want to ensure that the meat is cooked and that there's a minimum of moisture, so the skins don't soften up too much as they sit once out of the fryer. When preparing this and other similar fillings, cut the main ingredients so that they match in size and roll up well. I typically buy pork tenderloin steaks and freeze them for 10 to 15 minutes to make them easier to cut. Canned bamboo shoots work well so long as they first are boiled briefly to eliminate any tinny flavor. Spring rolls are great as a snack but also terrific for a light lunch along with a green salad.

Yield makes 18 to 20 rolls, serving 4 to 6 as a light main course, 6 to 8 for a snack

Shanghai Pork, Bamboo, and Mushroom Spring Rolls image

Steps:

  • To make the filling, combine the sugar, the 1/2 teaspoon cornstarch, and the soy sauce in a bowl. Add the pork and shrimp and stir to coat well. Set aside.
  • Put the remaining 1 1/2 tablespoons cornstarch into a small bowl and dissolve it in 3 tablespoons of the reserved mushroom soaking liquid. (Use water or stock if you mistakenly discarded the liquid.) Set aside.
  • Heat 1 1/2 tablespoons of the oil in a large skillet over high heat. Add the ginger and garlic and cook, stirring constantly, for about 30 seconds or until fragrant. Remove the garlic and ginger with a slotted spoon and discard. Add the pork and shrimp mixture, stirring constantly to separate the pork into shreds and shrimp into nuggets, and cook just through, about 1 1/2 minutes. Transfer to a platter. Add the remaining 1 1/2 tablespoons oil to the skillet. When the oil is hot, add the mushrooms, bamboo shoots, bean sprouts, and salt. Cook, stirring constantly, for about 5 minutes, or until the bean sprouts are soft and just cooked through. The mixture will be about half of the original volume. Return the pork and shrimp to the skillet and stir to combine. When heated through, about 45 seconds, lower the heat slightly. Give the cornstarch mixture a stir and pour over the filling mixture. Cook for about 30 seconds, to bind the mixture. Transfer to a platter and spread out. Set aside to cool completely before using. You should have about 3 cups. (The filling can be prepared 2 days in advance, covered, and refrigerated after cooling. Return to room temperature before wrapping.)
  • Before assembling the spring rolls, line a baking sheet with parchment paper. For each spring roll, place a skin, smooth side down, on your work surface. Place a generous 2 tablespoons of filling slightly below the center of the skin. Follow the directions on page 75 to create a cigar shape. Before folding in the sides, brush some beaten egg on all of the exposed edges to ensure a good seal. Set the finished rolls, seam side down, on the prepared baking sheet. Keep them covered with a kitchen towel to prevent drying. (To freeze, put them on a baking sheet, about 1/2 inch apart, and slide them into the freezer. After they have hardened, about 1 hour, transfer them to a zip-top bag and keep frozen. Fry them unthawed. They will take a little longer than 3 minutes but will be just fine.)
  • Heat 1 inch of oil in a wok, saucepan, or deep skillet over medium-high heat to about 350°F on a deep-fry thermometer. (If you don't have a deep-fry thermometer, stick a dry bamboo chopstick into the oil; if bubbles rise immediately to the surface and encircle the chopstick, the oil is ready.) Slide in a few spring rolls and fry, turning as needed, for about 3 minutes, or until golden brown and very crisp. Remove from the oil and drain. Return the oil to temperature, then repeat with the remaining rolls. After all the rolls are fried, you may refry them for 30 seconds in 350°F oil to quickly reheat. (Alternatively, keep the rolls in a warm oven during frying.)
  • Serve the spring rolls hot, whole or halved diagonally, with the vinegar as a dipping sauce.

Fettuccine With Asparagus And Shiitake Mushrooms image

Steps:

  • Steam the asparagus until tender but firm. Drain and set aside. Meanwhile, bring four quarts of water to boil for the fettuccine.
  • Heat the oil in a large frying pan. Add the garlic and the shallots and saute for one minute. Add the mushrooms and saute until tender (three to four minutes). Season to taste with salt and pepper.
  • Add the asparagus and parsley and keep the mixture warm until the fettuccine is cooked.
  • Cook the fettuccine until al dente, drain and transfer to a heated serving bowl. Add the sauce, toss and serve. Pass the cheese separately.
