SOUTHERN PEACH COBBLER

- Preheat oven to 400°. In a Dutch oven, combine brown sugar, cornstarch and water until smooth. Add peaches; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low; stir in butter and lemon juice. , For topping, combine flour, sugar, baking powder and salt in a bowl. Stir in milk, butter and orange zest if desired. Transfer hot peach mixture to an ungreased 13x9-in. baking dish. Spoon topping over peaches. Bake, uncovered, until golden brown, 30 to 35 minutes. If desired, serve with vanilla ice cream.

- Preheat the oven to 350 degrees F.
- Drain 1 can of peaches; reserve the syrup from the other. Place the butter in a 9- by 12-inch ovenproof baking dish. Heat the butter on the stove or in the oven until it's melted. In a medium bowl, mix the flour and sugar. Stir in the milk and the reserved syrup. Pour the batter over the melted butter in the baking dish. Arrange the peaches over the batter. Bake for 1 hour. The cobbler is done when the batter rises around the peaches and the crust is thick and golden brown. Serve warm with fresh whipped cream
- Chill a large metal mixing bowl and the wire beater attachment in the freezer for about 20 minutes. Pour the chilled cream and sugar into the cold mixing bowl and beat until it forms soft peaks, about 5 minutes. The mixture should hold its shape when dropped from a spoon. Don't overbeat or you'll have sweetened butter!

- Preheat the oven to 350 degrees F (175 degrees C).
- Melt butter in 9 x 13 inch pan.
- Mix together the flour, sugar, and milk. Pour mixture into the pan. Spread peaches, including syrup, evenly around the pan.
- Bake in preheated oven for 30 to 40 minutes, until the crust turns golden brown. Let cool for about 10 minutes before serving.

WASH DAY COBBLER
I found this recipe in an old cookbook that I checked out at a library. It tastes wonderful. I've never tried it with store bought pie filling (4 Cups). Like all cobblers, it's good with ice cream or home-made whipped cream.

- 1. Mix first 6 ingredients together.
- 2. Butter an 8"x8" glass casserole dish. Pour the batter into the dish.
- 3. Pour on the fruit, juice and all. Sprinkle with sugar. Bake at 350 degrees for an hour.

- Preheat oven to 375 degrees F. Grease a 13x9-inch baking pan with 1/2 stick (4 tbs) of the butter. Set aside.
- On a lightly floured surface, roll out the pie crusts until they are large enough to cover the baking pan surface.
- In a large skillet, melt the remaining 1/2 stick (4 tbs) butter over medium heat. Mix in agave syrup, cinnamon, nutmeg, and peaches. Add in 2 pinches of salt and mix well. Once the mixture begins to simmer, reduce the heat to low and continue cooking for 10 minutes. Remove mixture from heat and set aside to cool.
- Pour half of the peach mixture into the prepared baking pan in an even layer. Grate half of the orange zest on top of the peaches. Place the first sheet of pie crust on top. Bake for 15 minutes or until light brown.
