WATERMELON-MINT WATER

- Place 4 cups 1/2 inch-cubed watermelon (about 1 1/4 pounds; lightly smashed) and 6 sprigs mint (lightly crushed) in a pitcher. For still infused water, add 2 quarts of water. For sparkling water, add 1 quart of seltzer during prep and a second quart just before serving. Refrigerate 2 to 4 hours to allow the ingredients to infuse. Stir well and strain, discarding the solids. For serving, add fresh watermelon and mint sprigs for garnish and plenty of ice. The infused water will keep refrigerated for up to 2 days.

- Combine mint leaves, sugar, and 1/4 cup water in a small pot. Bring to a boil and stir until sugar has dissolved. Transfer mixture to a heatproof container and chill, uncovered, until cool, about 30 minutes.
- Strain mint syrup into a blender; discard mint leaves. Add watermelon and lime juice and blend until very smooth. Using a fine-mesh sieve, strain into a pitcher; discard solids. Add 2 cups water and stir well to combine. Serve with mint sprigs.

- Aqua fresca can be stored in an airtight container and chilled for up to 1 day.

- Puree the watermelon and water in a blender until smooth. Add sugar to taste. Cut the lime slices in half. Place a half lime slice into each of 8 glasses along with 3 mint leaves. Crush with a cocktail muddler, then fill each glass with ice. Pour in the watermelon agua fresca, and stir before serving.

- Blend together the watermelon or cantaloupe with 1 1/2 cups of the water, the lime juice and the sugar at high speed until smooth. Strain through a medium strainer into a large pitcher or bowl. Stir in the remaining water. Refrigerate for 1 hour or longer. Fill a glass with ice, pour in the agua fresca, garnish with a mint sprig, and serve.

- Combine sugar and water in a saucepan. Cook over high, whisking occasionally, until sugar dissolves, 4 to 5 minutes. Remove from heat, and add mint. Let stand, uncovered, 15 minutes. Strain into a bowl and discard mint. Chill syrup until ready to use.
- Process watermelon in a blender until smooth. Strain into a large pitcher (you should have about 4 cups. If you have more, reserve for another batch); discard solids.
- Stir together water, lime juice, 4 cups watermelon juice, and ½ cup syrup in a pitcher. (Reserve remaining Mint Simple Syrup for another use). Serve over ice, and garnish with mint sprigs.
