WEEZIE'S MEATBALLS DELIGHT
I am a cook that cooks out of her head with the help of recipes. I was in a hurry to make a dish for our pot luck and because I love to cook, I am always having a hard time choosing what to make. Welllll... at the last minute all I had to work with was Ground Beef. So this is what I came up with and it was a hit. I was hoping to bring some home for the hubby but they were all gone. Hope you enjoy too!

Steps:
- Mix all ingriedients with Ground Beef except for the pineapple, red bell peppers and bar b que sauce. Make into balls (size is optional) but I use about a 1 inch ball. Brown all of the meatballs.
- Combine Pineapple and juice in a pot. Cut the red peppers into chunks and add the the pineapple juice. Bring to a boil and then lower heat to simmer. Add bar b que sauce and mix well. Add browned meat balls and simmer about an hour. Serve over cooked white rice.
- Just a hint....you can add more bar b que sauce to your liking. I started out with two cups. Bon Appetite!

- In a large bowl, mix the breadcrumbs together with the milk, cream (If using), egg, garlic, salt, peppers and spice. Allow the milk to soak into the breadcrumbs for at least 10 minutes.
- Once the milk has absorbed some, add in the onion, meat(s) and parsley. Mix well with your hands to combine.
- Heat 1 tablespoons of butter and 2 teaspoons of oil in a pan on medium-high heat. Fry meatballs in batches of two so they don’t stew or simmer. Transfer to a warm plate and cover with foil.

- Combine bread and milk in a large bowl. Press the bread down into the milk to fully submerse and soak into the bread. Set aside.
- While the bread is soaking, get all of your meatball ingredients chopped and ready. Add all of the meatball ingredients in the bowl with the soaked bread and mix well.
- Roll about three tablespoons worth of meat mixture into a ball. Set aside onto a plate and repeat until all meat is used.
