WEIGHT WATCHER FRIENDLY PAPRIKA BEEF (6 FPS)
This delicious sauteed beef is weight watcher friendly & has 6 FPs per serve. I like to serve it with no yolk noodles.

Steps:
- Heat a non-stick fry pan.
- Add oil and saute the beef til browned, remove and set aside.
- Add the onions, garlic and mushrooms. Saute for 3 minutes.
- Add the paprika and saute a further minute.
- Return the beef to the pan, add the beef broth and tomato paste. Bring to boil and simmer lightly 5 minutes.
- Remove the pan from the heat add the sour cream.
- Over low heat, gently bring to a simmer but do not boil.
- Season to taste with salt and pepper.

PAPRIKA BEEF
I made this for Russ and me the other night and was very pleased with the result. We ate it over horseradish mashed potatoes. I cooked this in our electric frying pan (skillet), but you could do it on the stove top on low.

Steps:
- Heat the oil and cook the onions, garlic and pancetta until the onions are soft (about 10 minutes).
- Add the chilies and beef and cook until the beef changes colour and browns a little.
- Add the remaining ingredients and cook on a low setting (just simmering) for 1 ½ hours or until very tender. Add a little extra water if it ever looks like catching.

Steps:
- In a large saucepan, brown beef in oil on all sides.
- Add onion and garlic; cook until onion is tender.
- Add 1 cup of water, ketchup, brown sugar, paprika, Worcestershire sauce, salt, mustard and cayenne; mix well.
- Bring to a boil. Reduce heat; cover and simmer for 1 1/2 to 1 3/4 hours or until beef is tender.
- Combine flour and remaining water until smooth; gradually stir into stew.
- Bring to a boil; cook and stir for 2 minutes or until thickened.
- Serve over noodles.

TOMATO AND BARLEY SOUP
I have adapted this recipe from one that I found on allrecipes.com by Nancy Olsen. It is so healthy, Weight Watcher friendly and tastes great. You can substitute the chicken broth with vegetable broth if you want vegetarian.

Steps:
- Heat the olive oil in a large pot.
- Add the onions, carrots, celery and garlic. Saute for about 10 minutes or until the vegetables are starting to soften.
- While they are cooking pour the barley into a dish with water to cover.
- Add the tomatoes, broth, water, bay leaf, and pepper and bring to a boil, stirring occasionally.
- Drain the barley and add to the pot.
- Reduce heat and cook at a low boil for about 45 minutes (until the barley is tender).
- Add more water or broth if it thickens too much.

PAPRIKA BEEF AND MUSHROOMS
Low fat, stove top cooking. Goes well with mashed potatoes, jacket baked potatoes, rice, pasta or noodles.

Steps:
- Remove any fat from the meat and cut into cubes.
- Brown in a little hot oil. Do this in batches to keep from 'stewing'.
- Return all meat to pan and add onion, garlic, mushrooms, tomato paste, paprika, stock powder and first measure of water.
- Cover and simmer gently for 1-11/2 hours or until the meat is tender.
- Mix the cornflour with the 2 Tbsp water and stir into the beef.
- Heat for a few minutes until thickened.
- Serve sprinkled with chopped parsley if liked.

INSTANT POT BEEF PAPRIKASH
This Instant Pot Beef Paprikash is a quick and easy recipe that is packed with flavor, is oh-so-filling, and is certain to be a hit with your entire family!

- Turn Instant Pot to sauté.
- Add butter and onions. Cook for 4 minutes then press cancel button.
- Add stew beef, garlic, ketchup, Worcestershire sauce, brown sugar, salt, beef broth, paprika and dry mustard to onion mixture.
- Place lid on pot and turn steam valve to closed.
- Press Manual and set Instant Pot to 20 minutes.
- Once cooked and timer goes off, allow Instant Pot to naturally depressurize for 10 minutes. Do NOT flip the switch.
- After 10 minutes, flip the steam valve to steam and open lid. Stir.
- In a small bowl combine corn starch and water. Mix well and pour into beef mixture.
- Turn Instant Pot to Sautee and cook for approximately 5 minutes or until sauce thickens.
- Serve over mashed potatoes.

- Mix peanut butter with honey and microwave on high for 20 seconds.
- Stir in the crushed cereal immediately after removing from microwave.
- Place mixture in a 9" pie pan and spread flat(with hands)to make the bottom crust.
- Combine pudding mix and milk in a seperate bowl. After mixing, pour pudding over the prepared crust and refrigerate for 2 hours.
- Remove from refrigerator and cut into 8 equal size pieces.
