Steps:

  • Preheat oven to 350. While the oven is preheating: Grate the lemon rind and place in a bowl. Cut the lemon and squeeze. Measure 4 tsp and place in a bowl. Measure butter, salt, pepper, and Rosemary and add to the bowl. Microwave or place in oven until butter is melted. Mix well. Divide the fish into 6 servings and place in a single layer in a baking dish. Pour the butter seasoning mixture evenly over the fish . Bake for 25 minutes or until the fish flakes easily.

1 lb haddock or flounder fillets
1 tbsp butter or margarine
4 tsp lemon juice
1 tsp lemon rind- grated
1/8 tsp salt
dash pepper
1/8 tsp rosemary

  • Preheat oven to 450 degrees.
  • In a shallow dish, like a pie plate, combine all dry ingredients.
  • Place milk in another shallow dish.
  • Dip fish in milk, then in crumb mixture.
  • Place in pan coated with cooking spray.
  • Drizzle with melted butter.
  • Bake for 10 minute or until fish flakes apart with fork.

1/4 cup white cornmeal (or yellow)
1/4 cup dry breadcrumbs (I use seasoned)
1/2 teaspoon dried dill
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon paprika
1/3 cup skim milk
3 tablespoons butter, melted

Steps:

  • Spray the rack of a broiler pan with nonstick spray; preheat broiler.
  • Put the catfish on the prepared rack. Lightly spray the fish with nonstick spray and sprinkle with 1/4 teaspoon black pepper. Broil the fish 5 inches from the heat just until opaque in the center, about 8 minutes. (Tip: To check if the fish is cooked properly, slit the thickest part of fish fillets with a thin-bladed knife. Peek inside; the flesh should be opaque and should flake easily.).
  • Meanwhile, whisk the lemon zest and juice, orange juice, capers, oil, oregano, and the remaining 1/4 teaspoon pepper in a small bowl.
  • Divide the cucumbers among 4 plates. Top each serving with 1 fillet; drizzle evenly with the dressing.

Steps:

  • Preheat oven to 425 degrees.
  • Arrange shrimp in single layer in a 13 x 9 baking dish coated with cooking spray.
  • Combine lemon juice and next 5 ingredients; pour over shrimp.
  • Bake at 425 degrees or 8 to 10 minutes or until shrimp are done.
  • Sprinkle parsley over shrimp, serve immediately.

  • Cut a 1m long sheet of baking paper into 4 x 25cm lengths. Carefully lay a fish fillet on one half of each paper rectangle. Scatter over half the dill, top with the lemon slices and season well with salt and freshly ground black pepper. Fold the other half of each paper over the fish and pleat the edges to seal. Put in a roasting tin and bake for 10–12 minutes or until the fish is cooked through and juicy (open one parcel to check).
  • While the fish is cooking, halve the cooked new potatoes lengthways. Heat a nonstick frying pan over a medium heat and mist with cooking spray. Add the potatoes and leeks, season well, and fry until golden.
