Steps:

  • Preheat oven to 180°C.
  • Cook pasta in a large saucepan of salted boiling water following packet instructions until almost cooked through, or quite al dente. Drain and set aside.
  • Meanwhile, heat oil in a medium saucepan.

Bake in oven until cheese is golden and bubbly, about 30 minutes. Serve with a simple mixed salad tossed with fat-free dressing.

800 g canned tomatoes, chopped
1 beef stock cube (beef, dissolved in)
125 ml hot water
100 g reduced-fat mozzarella cheese, shredded

  • Preheat oven to 180°C. Heat oil in a large saucepan over medium–high heat. Cook onion, garlic, carrot and zucchini, stirring, for 5 minutes or until soft. Add mince and cook, breaking up any lumps, for 5 minutes or until mince has browned.
  • Add tomatoes. Fill tomato can three-quarters full with water and add to pan. Season with salt and pepper. Stir in pasta and thyme until well combined.
  • Transfer pasta mixture to a 8-cup (2 litre) capacity baking dish and sprinkle with mozzarella. Bake for 35 minutes or until cheese is golden and bubbling and pasta is tender. Stand for 5 minutes. Serve sprinkled with extra thyme sprigs.
