WEIGHT WATCHERS STUFFED SHELLS

Received this from a meeting. Very tasty! They point value we were told from our meeting leader was 4/serving. Some of the reviews people have recalculated it saying 8. To be safe, I would refigure it so your comfortable knowing the points.

Weight Watchers Stuffed Shells image

Steps:

  • Preheat oven 375.
  • Cook shells until al dente, rinse and set aside.
  • Mix cheeses, salt, garlic powder, oregano and pepper.
  • Spread a few spoonfuls of tomato sauce on bottom of 9x13 dish.
  • When shells are cool enough to handle, fill each shell with cheese mixture and place in baking dish. When all shells are in dish, spoon remaining tomato sauce over shells. Cover pan and bake for 20 minutes. Yields about 4 shells per serving.

  • Coat a large nonstick skillet with nonstick spray. Heat pan over medium-high heat. Add onion and ground beef; sprinkle with salt and pepper. Cook until beef is done, about 6 minutes, stirring to crumble. Remove from heat and stir in tomato sauce, ¼ cup pickles, ketchup, and mustard. Add ½ cup cheese, stirring until cheese melts.
  • Lightly coat an 11 x 7–inch baking dish with nonstick spray. Stuff beef mixture evenly into pasta shells (about 2 rounded tablespoons per shell). Arrange stuffed shells into baking dish and sprinkle with remaining ¼ cup cheese. Bake until cheese melts and filling is thoroughly heated, about 20 minutes.
  • In a medium bowl, combine lettuce, tomato, and remaining ¼ cup pickles. Top shells with lettuce mixture.
