I found this recipe while cleaning up some old floppy disks. I got it from an old foodie BBS years ago (remember those?)

Apricot Tea Bread image

Steps:

  • Place apricots in a bowl and cover with boiling water. Soak for 1/2 hour.
  • Preheat oven to 350°F Coat a 9 x 5 inch loaf pan with non-stick cooking spray.
  • Drain apricots, reserving 1/4 cup of the soaking water.
  • Finely chop apricots. Set aside.
  • Sift together dry ingredients. Set aside.
  • Cream together the egg, sugar and oil.
  • Add flour mixture to egg mixture alternately with orange juice and reserved soaking water. Stir in apricots and pecans.
  • Spread batter in loaf pan and bake 1-1 1/4 hours, or until wooden pick inserted into center of bread comes out clean.
  • Turn out onto wire rack and cool.

3/4 cup dried apricot
boiling water (enough to cover apricots for soaking)
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 egg
1 cup sugar
3 tablespoons canola oil (or melted butter, for richer flavor)
1/2 cup orange juice
1 cup pecans, chopped

Steps:

  • Combine the flour, egg, baking powder, rose water, and buttermilk in a good sized bowl, stirring until they are well blended.
  • Fold in the candied fruits so they are distributed evenly in the dough. If the dough seems sticky, add more flour until you can work it easily with your fingers.
  • Shape heaping tablespoonfuls of the dough into four leaf clovers.
  • Place on a greased cookie sheet at 350*F for about 10 minutes, until fully raised and slightly browned.
  • Drizzle a little honey on top while cooling.

TRADITIONAL ENGLISH CUMBERLAND RUM BUTTER

A lightly spiced butter, laced with dark rum - this traditional old recipe originates from the county of Cumberland in the Lake District of Northern England. In Cumberland, rum butter served with oatcakes or buttermilk scones were given to friends who called at the house to see a new baby. In turn they would leave a silver coin, and on the day of the christening, when the butter bowl was empty, the coins were placed in it. A sticky bowl, with plenty of coins sticking to it, meant that the child would never be wanting. The saying goes...... "Butter symbolizes the richness of life, sugar the sweetness of life and rum, the spirit of life." Cumberland rum butter is traditionally served with Christmas pudding and mince pies; it also makes a wonderful gift for any new parents or to give throughout the festive season.

Traditional English Cumberland Rum Butter image

Steps:

  • Put the butter in a warmed bowl and cream it, either with a wooden spoon or an electric beater or handheld mixer.
  • Tip in the sugar and rum and mix everything together.
  • Grate in nutmeg to taste, (or mixed spice) and mix again.
  • Place in a bowl, an earthenware bowl is traditional, then chill until required.
  • Serve with mince pies, Christmas pudding, sweet tarts and pies, sweet biscuits, oatcakes, scones, crumpets, muffins or on toast.

6 ounces soft dark brown sugar
8 -10 tablespoons dark rum

I was born and bred in Cumberland (or Cumbria as it is now called, which you will perhaps know as the English Lake District). Rum Butter is a traditional Cumbrian dish which is served at Christmas time or any festive occasion especially babies Baptisms. When the rum butter dish was empty, silver coins were placed in it as a gift for the baby. This is my Mothers recipe which was handed down from her Mother....

Cumberland Rum Butter image

Steps:

  • Cream butter and sugar until really soft.
  • Add all the spices (don't overdo it!).
  • Beat in the rum gradually, then place in glass dish and refrigerate.
  • Serve on toast, with Christmas Pudding, Mince Pies or Jacobs Cream Crackers.

Steps:

  • Beat together vanilla, oil and eggs.
  • Add sugar, salt and baking powder and mix.
  • Add about half of the flour and mix. Gradually add the remaining flour until mixture comes away from the bowl. Do not over-add flour.
  • Pinch off pieces of dough and roll into pencil-thin strips about 6 inches long. Fold in half and twist into a rope. Place 1 inch apart on ungreased cookie sheets.
  • Brush with beaten egg and sprinkle with poppy seeds.
  • Bake 350 about 15 minutes.

Cantaloupe and Wild Blueberry Tea Bread image

Steps:

  • Preheat oven to 350 degrees.
  • Grease a small baking pan (8 x8 or smaller).
  • In a large bowl, beat the butter, sugar and cinnamon until creamy.
  • Slowly, add the eggs, one at a time, until well blended, about 3 minutes.
  • Add the sour cream, vanilla extract and flour, and mix until just blended.
  • Now gently add the blueberries, cantaloupe and hazelnuts into the batter, only mixing slightly.
  • Pour the mixture into the prepared baking pan and bake for 45 - 55 minutes.
  • Make sure to check the bread at 45 minutes, everyones ovens are different.
  • Remove from heat and place on cake rack for 6 - 10 minutes then turn out of pan and allow to cool before cutting.

Butter Pecan Tea Bread image

Steps:

  • Preheat oven to 350*F.
  • Grease and flour a 9x5x3" loaf pan.
  • Sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and brown sugar.
  • Stir in the pecans.
  • In another bowl, combine the egg, buttermilk, and melted butter; blend well.
  • Add to the flour mixture gradually; stir just until moistened.
  • Do not overmix.
  • Pour the batter into the prepared pan; bake at 350*F.
  • for 45 minutes, or until a toothpick tests out done.
  • Cool 10 minutes in pan before inverting; cool completely.

Lemon Almond Tea Bread image

Steps:

  • Beat softened butter at medium speed with mixer. Gradually add 1 cup granulated sugar, beating until light and fluffy. Add eggs one at a time, beating until just blended after each egg.
  • Stir together flour, baking powder and salt. Alternate with milk and add flour mixture to butter mixture. Beat on low speed, begin and end with flour mixture. Stir in 1 tablespoon lemon rind and 1/2 teaspoon almond extract.
  • Spoon into greased and floured 8x4 loaf pan.
  • Bake at 350 for 1 hour or until wooden pick stuck in center comes out clean. Let cool in pan for 10 minutes, then cool on wire rack.
  • For Glaze: Stir together powdered sugar and lemon juice until smooth. Spoon over top of bread and let it drip down the sides. Stir together remaining tablespoon of lemon rind and tablespoon of granulated sugar. Sprinkle on top of bread while glaze is still wet.
