WHEAT FREE, DAIRY FREE BANANA WALNUT ALMOND MUFFINS

These wheat-free, powerful muffins are hardy bits of nutrition and energy for a day of work and play. They are high in Omega-3's and can be adjusted according to diet needs. Use organic ingredients and make a special treat!

Wheat Free, Dairy Free Banana Walnut Almond Muffins image

Steps:

  • Preheat oven to 325.
  • Mix first (7) ingredients, set aside.
  • Mix sugar, vanilla bean, flax meal with mixer.
  • Add egg whites, mix.
  • Add banana, mix.
  • Add dry ingredients from step 1, mix inches.
  • stir in dried fruits, etc.
  • grease pans lightly.
  • spoon batter into muffin pans.
  • bake 40 minutes.

2 cups brown rice flour
1 cup walnut meal
1 cup almond meal
1 cup soy flour
1 teaspoon cinnamon
1 teaspoon nutmeg
4 teaspoons baking powder
1 cup sugar
1/4 teaspoon real vanilla beans or 1 teaspoon vanilla extract
1 1/2 cups flax seeds
4 egg whites
1 cup ripe banana (2-3)
1/2 cup chopped prune (any dried fruit, nut) (optional)
olive oil, for greasing pan

DAIRY FREE BRAN & WALNUT MUFFINS

It's so difficult to find dairy free muffins so I decided to make my own. This recipe will make either 12 full sized muffins or 34 tiny ones.

Dairy Free Bran & Walnut Muffins image

Steps:

  • Preheat oven to 375°F.
  • In a medium bowl add almond milk and vinegar. Stir. Then add wheat bran and stir again and let stand for 5 minutes.
  • In a large bowl add the flour, baking powder and baking soda, salt and walnut pieces and stir and make a well in the middle. Set aside.
  • Into the wheat bran bowl add the oil, molasses, splenda brown sugar, egg and vanilla and stir until well mixed. Then add this mixture into the bowl with the dry ingredients and mix just slightly just to moisten it (be careful not to overmix).
  • Pre-grease the muffin tins with a small amount of oil or use cooking spray. Fill the tins about 3/4 with the mixture.
  • Bake the full sized muffins for 20 - 25 minutes, and for the small size bake for about 17 - 20 minutes. After they are baked let stand for about 5 minutes then remove from pans.

  • Preheat oven to 375 degrees F (190 C) and line a standard muffin tin with paper baking cups. (I find the unbleached, brown paper liners to work best - they don't stick to the muffins when peeling.)
  • In a large mixing bowl, prepare the flax egg by mixing water and flaxseed together. Wait 5 minutes. Then add banana, baking powder, and baking soda and mash until only small chunks remain.
  • Add vanilla, oil, coconut sugar, brown sugar, maple syrup, sea salt, and cinnamon (optional) and whisk vigorously to combine. Add almond milk and whisk once more to combine.
  • Add almond meal, gluten-free flour blend, and oats and stir until just combined. Then divide batter between muffin tins, filling all the way full - there should be 12 muffins (amount as original recipe is written // adjust if altering batch size).
