WHITE BEANS WITH BABY SQUID
Steps:
- Cook squid in olive oil over high heat for 1 min until just cooked through and lightly browned. Add beans and heat through for 30 sec.
SEARED CALAMARI WITH WHITE BEANS AND CHORIZO
Steps:
- In a small bowl, mix together the calamari rings, garlic, chili flakes, sea salt, and freshly ground black pepper. Set aside.
- Heat a 12-inch skillet over medium-high heat. Toss in the chorizo and cook, shaking frequently, for 3 to 5 minutes or until slightly browned. Transfer the chorizo to a plate lined with a paper towel. Wipe out the skillet and return to high heat.
- Add the oil to the skillet and heat until very hot. Add the calamari mixture to the skillet; be careful because the pan will flame. Saute for a few minutes and then add the chorizo, beans and their juice, red bell peppers, parsley, lemon juice, and butter. Bring to a boil and simmer for 1 to 2 minutes. Adjust seasonings. If there isn't enough liquid, add a few tablespoons of clam juice or water.
- To serve, pour the stew into a shallow bowl and pass the croutons.
- Preheat oven to 350 degrees F.
- Mix the olive oil, garlic, parsley, sea salt, and freshly ground black pepper together. Cut the baguette into 1/4-inch slices at a severe angle. Lay baguette slices on a cookie sheet and brush with the seasoned oil. Bake for 10 to 12 minutes or until golden.
SQUID & PINTO BEAN STEW WITH GARLIC TOASTS

- Drain the pinto beans, rinse in water and put in a large saucepan. Add the halved onion, whole carrot and halved celery sticks, then cover with water and add the bay leaf. Bring to the boil, skim off any scum, turn down the heat and simmer until totally tender, for around 1 hr. When done, drain, discarding the bay leaf and cooked veg. Put the beans to one side until ready to use.
- Meanwhile, heat a flameproof casserole dish with 2 tbsp oil. Toss in the remaining onion, carrot, celery and the chopped garlic. Fry gently for 15 mins until the vegetables are tender. Stir through the squid, tomato purée and thyme sprig. Cook for a min or two, then pour over the passata and chicken stock. Bring to the boil, turn down the heat, pop on the lid and simmer for 45 mins, stirring occasionally. Take off the lid and cook down for 30 mins.
- Heat oven to 220C/200C fan/gas 7. Stir the beans into the squid and cook until the squid is totally tender and the sauce has thickened. Meanwhile, put the bread on a baking sheet. Mix the remaining oil with paprika and seasoning, then drizzle over the bread and put it in the oven, cooking for a few mins each side until golden and crisp. Rub the oil side with the whole garlic clove. Scatter parsley over the stew and serve with the garlic toasts and some wilted greens, if you like.

WHITE BEANS WITH SQUID AND BROKEN NOODLES

- Bring a medium pot of water to a boil, and salt it. Meanwhile, put half the olive oil in a medium saucepan over medium heat. A minute later, add the beans and their liquid. Bring to a boil, stirring, and add squid, along with some salt and pepper. Reduce heat to a simmer, and continue to cook, stirring occasionally.
- When water boils, cook the noodles until they are barely tender, about 5 minutes. Drain, and add them to the simmering beans. Cook, stirring occasionally, until the squid and noodles are tender, adding a little liquid if necessary. (Do not add liquid prematurely -- the squid will produce a lot on its own.)
- When just about done, add garlic. Cook it just long enough to take the edge off its rawness. Spoon the mixture into 4 dishes, garnishing with parsley and sprinkling with remaining olive oil.

GRILLED BABY SQUID

- Start a charcoal or wood fire or preheat a gas grill; the fire should be quite hot (on a gas grill, as hot as you can get it) and the rack no more than 4 inches from the heat source and preferably less. Or preheat a heavy pan over high heat (and turn on an exhaust fan if you have one) for about 5 minutes.
- If you need to clean the squid, pull off the head and tentacles and separate them by cutting just behind the head; save the tentacles and discard the head. Rinse out the inside of the bodies and dry well.
- Sprinkle the squid with coarse salt and toss them lightly with a tablespoon or two of olive oil. If you are grilling, skewer the squid. Grill or pan-grill the squid quickly, about 1 minute per side; they should brown nicely but remain moist inside.
- Put the squid on a plate. Drizzle with a little more olive oil and sprinkle with lemon juice or vinegar and a bit more salt. Serve immediately.
- Grilled Baby Squid, Japanese Style
- Here the grill is requisite, because the soy sauce coating would burn on a griddle: After cleaning the squid, marinate them briefly in a mixture of 1/4 cup soy sauce and 2 tablespoons mirin (or 1 tablespoon honey mixed with 1 tablespoon white wine). Grill and garnish with toasted sesame seeds (page 596). (Black sesame seeds are more commonly used here, and they look nice against the white squid, so if you can find them, by all means use them. Look in Japanese, Chinese, or Indian stores.)

- Rinse the beans gently under running water and drain. In a large mixing bowl, toss together the beans, celery, garlic and parsley. Stir in 3 tablespoons olive oil and 2 tablespoons lemon juice.
