- Grease a baking sheet with 1 teaspoon butter., In a microwave-safe bowl, mix sugar and corn syrup; microwave, uncovered, on high for 3 minutes. Stir to dissolve sugar; microwave 2 minutes longer. Stir in cashews and remaining butter; microwave on high for 40 seconds. Stir; continue microwaving in 20-second intervals until mixture turns a light amber color, about 1-2 minutes. (Mixture will be very hot.) Quickly stir in baking soda and vanilla until light and foamy., Immediately pour onto prepared pan, spreading with a metal spatula; cool slightly. Refrigerate until set, 15-20 minutes., Break brittle into pieces. Store between layers of waxed paper in an airtight container.

SHORECOOK'S CASHEW BRITTLE
Through the years I have always made peanut brittle, but when my hubby could no longer have peanuts, I replaced them with cashews. This is one of my biggest requests at Christmas. It makes a nice thank-you gift as well and is a hit at bake sales.

- Grease a baking sheet with 1 tablespoon butter.
- Combine cashews, sugar, and corn syrup in a large microwave-safe glass or ceramic bowl. Microwave on high until sugar melts and mixture is hot, about 6 1/2 minutes.
- Stir 1 tablespoon butter and vanilla extract into cashew mixture. Microwave until hot, about 2 1/2 minutes more. Stir baking soda into cashew mixture until light and foamy. Spread mixture on prepared baking sheet. Cool completely and break into pieces.

- Spread 1 1/2 tablespoons butter all over a rimmed baking sheet until heavily coated.
- Stir sugar and corn syrup together in a microwave-safe bowl. Microwave on high, uncovered, for 4 1/2 minutes. Stir and microwave for 3 minutes longer.
- Stir in cashews, 2 teaspoons butter, and salt. Microwave until mixture turns a light amber color, 1 minute to 1 minute 40 seconds; mixture will be very hot. Quickly stir in baking powder and vanilla extract until light and well mixed. Pour mixture onto the prepared baking sheet immediately and spread with a metal spatula.
- Place in the refrigerator until chilled, at least 20 minutes. Break into small pieces.

WHITE CHOCOLATE BARK
Ina Garten loves to make chocolate bark for the holidays as a quick and colorful candy. Temper the chocolate in a microwave as a foolproof and easy solution.

- Preheat the oven to 350 degrees F. Using a pencil, draw an 8-by-10-inch rectangle on a piece of parchment paper. Turn the parchment paper over so the pencil mark doesn't get onto the chocolate and place it on a sheet pan.
- Place the pistachios in one layer on another sheet pan and bake for 8 minutes. Set aside to cool.
- Place three quarters of the white chocolate in a heat-proof glass bowl and put it in the microwave on high for 30 seconds. (Time it with your watch for accuracy.) Stir the chocolate with a rubber spatula, return it to the microwave for another 30 seconds, then stir again. Continue to heat and stir in 30-second intervals until the chocolate is just melted. Immediately stir in the remaining chocolate and allow it to sit at room temperature, stirring often, until it's completely smooth. (If you need to heat it a little more, place it in the microwave for another 15 seconds.)
- Pour the melted chocolate onto the parchment paper and spread it lightly to fill the drawn rectangle. Sprinkle the top evenly with the cooled pistachios, the cranberries, and apricots. Press the nuts and fruit lightly so they will set in the chocolate. Set aside for at least 2 hours until firm or refrigerate for 20 minutes. Cut or break the bark in 16 pieces and serve at room temperature.
CASHEW AND WHITE CHOCOLATE BRITTLE WITH SICHUAN PEPPERCORNS
This beautiful chocolate-covered brittle is crispy, creamy and packs a punch thanks to toasted Sichuan peppercorns and dried arbol chiles.

- Butter a baking sheet and set aside. Bring the sugar, dark corn syrup and 1 cup water to a boil in a medium saucepan over medium heat, stirring occasionally. Cook until a candy thermometer registers 260 degrees F. Stir in the butter and all the cashews and continue to cook until the cashews are well coated and not clumpy, about 3 minutes. Stir in the baking soda and five-spice powder. Pour onto the prepared baking sheet and spread into a thin, even layer. Let cool for 15 minutes, then top with the white chocolate and let sit until the chips are soft and spreadable. Spread into a smooth layer.
- Put the chiles and peppercorns into a small skillet over medium heat and toast until fragrant, about 2 minutes. Sprinkle evenly over the white chocolate and let set completely, about 3 hours, then break into pieces.
MILK-CHOCOLATE-MOUSSE CAKE WITH CASHEW BRITTLE

- Make cake: Preheat oven to 350 degrees. Butter an 8-inch round cake pan. Line with parchment, and butter parchment. Sift together flour, cocoa, and salt.
- With a mixer fitted with the whisk attachment, beat egg yolks and sugar on medium-high speed until pale and thick, about 7 minutes. Beat in vanilla.
- With a mixer fitted with the whisk attachment, beat egg whites until medium-stiff peaks form. Fold into yolk mixture in 3 additions. Fold in flour mixture in 2 additions until almost incorporated. Fold in butter. Pour into pan.
- Bake cake until a toothpick inserted into center comes out clean, 25 to 30 minutes. Let cool completely in pan on a wire rack. Invert onto rack. Remove parchment, and turn right side up.
- Make brittle: Bring sugar, corn syrup, water, and salt to a boil, stirring until sugar has dissolved. Wash down sides of pan with a wet pastry brush, and cook until pale amber, about 12 minutes total. Stir in butter. Remove from heat, and stir in cashews. Pour onto a parchment-lined baking sheet to cool. Coarsely chop.
- Make mousse: Melt chocolates and butter in a heatproof bowl set over simmering water, stirring occasionally. Cool 20 minutes. Keep water simmering.
- Combine yolks, sugar, and salt in a heatproof bowl set over simmering water. Whisk until sugar has dissolved and mixture reaches 160 degrees on a candy thermometer. Remove from heat. With a mixer fitted with the whisk attachment, beat on medium-high speed until thick and cool, about 7 minutes.
- Whisk cream, creme fraiche, and vanilla until medium-stiff peaks form. Fold chocolate mixture into yolks. Fold in cream mixture, and then 1 1/2 cups brittle. Cover, and refrigerate, stirring occasionally, until slightly thickened, 1 hour.
- Make ganache: Fill a bowl halfway with ice water, and set aside. Combine chocolates and salt in a heatproof bowl. Bring milk, cream, and butter to a boil. Pour over chocolate, and whisk until smooth. Reserve 1 cup ganache at room temperature. Place bowl with remaining ganache in ice water, and whisk constantly, scraping bowl, until ganache is set but not solid.
- Make syrup: Mix liqueur and vanilla.
- Assemble cake: Using a serrated knife, trim rounded top of cake to create a flat surface, and shave off just the slightest bit of cake around edges so that it fits inside an 8-by-3-inch springform pan without touching sides. Cut cake in half horizontally. Cut both layers in half horizontally to make 4 layers. Place 1 layer in pan. Brush with 1/4 of the syrup. Top with 1/2 cup ganache and 1 cup mousse. Repeat with cake, syrup, ganache, and mousse. Spread 1 cup reserved ganache over top. Refrigerate at least 2 hours (preferably overnight).
- Run an offset spatula around edges of pan, and remove sides. Garnish with berries and, if desired, Cashew-Brittle Hearts.
WHITE CHOCOLATE RASPBERRY BRITTLE
From Joy of Baking comes this delightful brittle recipe. This was a lovely addition to my goodie tray during the holidays. Note that once this sets, the brittle will still be slightly soft. The brittle can be stored in an airtight container for several days. Make your puree from frozen raspberries and sugar. Cooking time listed is the time for the brittle to set.

- Line a cookie sheet with parchment paper.
- Melt the white chocolate in a double boiler.
- Using a spatula, spread the white chcolate in a 10" square on the parchment paper.
- Evenly drizzle the raspberry puree over the white chocolate.
- Use a toothpick or skewer to swirl the puree through the chocolate for a decorative effect.
- Let the brittle sit at room temperature for 2-3 hours or until firm.
- Cut the brittle into the desired size pieces and remove the parchment paper.
- Handle carefully as the puree will be slightly sticky.
