WINTER SAUSAGE CASSEROLE
This is a dish that i always make for the family, its so easy to make and you will probably find that you have all the ingredients in your cupboard...try it you will love it.

Steps:
- Grill your sausages & then chop them up.
- Fry your onion.
- Place half of your sausages & half of the onion in a square casserole dish.
- Pour the tin of tomatoes over the sausage & onion.
- Put the rest of the sausage & onion on top of the tomatoes.
- Then pour the tin of peas(in there juice) over.
- Peel & thinly slice your potatoes & place them on top of your casserole.
- sprinkle your 1tbl of curry powder over the potatoes.
- In the empty tin of peas -- 1/2 fill with cold water & pour over the potatoes.
- Place kitchen foil over the dish & place in the oven on gas mark 5 for 1 1/2 hours.
- Serve with cob & butter.

Years ago, our vegetable garden kept us well-supplied all year long. Dad stored huge piles of potatoes and squash in the coldest part of the basement. In winter the squash was so hard. - Lightly brown and turn the sausages on all sides, over a medium high heat. This browing will give good colour to the dish. Remove the sausages from the casserole pot and set them aside to prepare the vegetables.
- Add the chopped onion to the casserole pot and cook over a low heat for 5 minutes, until the onion is soft. Add the garlic, paprika and thyme and cook for a further minute.
- Add the chopped potatoes, carrots and celery and stir everything around in the casserole pot so all the vegetables are coated and mixed. Cook for 5 minutes.
- Add the chopped tinned tomatoes, tomato paste, vegetable stock and bay leaves. Season and bring to a gentle simmer. Add the browned sausages back to the pot.
- Place the casserole into the oven. Cook for 40-60 minutes, until the potatoes are cooked through. Serve hot.
