WW VANILLA BISCUITS (COOKIES)

A good basic biscuit to go with a cup of tea. I love the texture the custard powder gives them. At only 1.5 points each they are a great treat. Australian measurements used.

Steps:

  • Preheat oven to 180 deg C (356 deg F). Line 2 trays with baking paper.
  • Into a medium bowl sift together the SR flour and custard powder. Stir in the sugar.
  • Using your fingertips, rub the butter into the dry ingredients until the mixture looks like soft breadcrumbs.
  • Combine the milk and vanilla essence then stir into the mix. It should form a firm dough.
  • Drop 2 teaspoons of dough in heaps onto the the prepared trays. They will spread so allow space between biscuit. Lightly flatten with fork then sprinkle with almonds. Press lightly to adhere.

1/2 cup custard powder
1/2 cup caster sugar

Steps:

  • In a medium bowl, sift together the flour, salt, and baking powder. Set aside.
  • In the bowl of a standing mixer fitted with a paddle attachment, combine the butter and sugar and beat on medium speed until light and fluffy. Add the egg and vanilla and beat until combined.
  • Add the flour mixture in 2 batches, scraping down the bowl after each addition. Beat until the dough just comes together, being careful not to over mix.
  • Turn out the dough onto a lightly floured surface. Form the dough into a ball, wrap it in plastic, and refrigerate for 30 minutes.
  • Place the ball of dough between 2 pieces of parchment paper and roll out to 1/4-inch thick. Keeping the dough in the parchment, transfer to a cookie sheet and place in the refrigerator for at least 1 hour.
  • Preheat the oven to 350 degrees F.
  • Cut out the cookies in the desired shapes and place on a half-sheet pan lined with parchment paper or an un-greased nonstick cookie sheet, at least 1-inch apart. Transfer to the freezer and chill for at least 15 minutes or until they are firm.
  • Bake until the cookies are light golden brown, about 10 minutes.
  • Let cookies cool completely on the sheets before decorating.

2 1/3 cups plus 2 tablespoons (11-ounces) all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
3/4 cup (1 1/2 sticks; 6-ounces) unsalted butter
1/2 cup plus 2 tablespoons (4-ounces) granulated sugar
1 large egg
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 325 degrees. Pulse flour, sugar, and salt in a food processor until combined. Add butter, and pulse until the mixture resembles coarse crumbs. With machine running, pour in 1/4 cup cream and the vanilla, and process until dough just comes together.
  • Roll dough between lightly floured sheets of parchment until 1/16 inch thick. Using a 2 1/2-inch fluted cutter, cut out 36 rounds, gathering together scraps and rerolling if needed. Space 1 inch apart on parchment-lined baking sheets. Chill in freezer until firm, about 15 minutes.
  • Whisk together egg yolk and remaining tablespoon cream. Brush onto tops of cookies. Bake until golden brown, 15 to 20 minutes. Let cool. (Unfilled cookies can be stored in an airtight container up to 4 days.)
  • Turn over half the cookies, and spread 1 heaping teaspoon chocolate or chocolate-hazelnut spread onto each. Top with remaining cookies. Refrigerate until set, about 15 minutes (or up to 2 days; cookies will soften slightly with longer storage).

1 cup all-purpose flour, plus more for dusting
1/4 cup sugar
1/2 teaspoon coarse salt
1/4 cup (1/2 stick) cold unsalted butter, cut into small pieces
1/4 cup plus 1 tablespoon heavy cream
1/2 teaspoon pure vanilla extract
1 large egg yolk
6 ounces finely chopped milk chocolate, melted, or 1/2 cup chocolate-hazelnut spread (such as Nutella)

SHAPED VANILLA COOKIES

These are soft, cake-like cookies, best with frosting. Roll them out thickly, and bake no more than 8 minutes. They will stay soft, and everyone raves over them. I use them as cutouts for holidays.

Steps:

  • Cream together the margarine, sugar and eggs. Stir in vanilla, flour, baking soda and salt.
  • Roll out (not too thin) and cut into any shape. Bake at 375 degrees F (190 degrees C) for 8 minutes.
  • I have used confectioner sugar frosting, or buttercream frosting, or even canned frosting ( if I'm desperate). Enjoy!
