YOGURT CHICKEN
Very tasty yogurt-dipped, breaded chicken breasts. The yogurt makes the chicken VERY moist and the coating nice and crunchy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place yogurt in a small bowl and stir until creamy smooth. Add lemon and stir together. (Note: If you do not stir the yogurt first, the lemon juice will make the yogurt curdle.) In a separate shallow dish or bowl combine the bread crumbs, garlic powder and salt to taste; mix together.
- In a 9x13 inch baking dish place 1 scant pat of butter or margarine for each chicken breast. Rinse chicken breasts and pat dry. Dip each breast in the lemon/yogurt mixture, then in the bread crumb mixture (coating completely but not heavily).
- Place coated chicken in the baking dish and top each breast with a full pat of butter or margarine. Sprinkle with chopped parsley and bake in the preheated oven for 1 hour. Let cool for 5 to 10 minutes before serving.

- Combine yogurt, cumin, lemon juice, garlic and cilantro in a small bowl. Place chicken breasts in a glass baking dish or in a resealable plastic bag. Spoon yogurt mixture over the chicken and coat. Cover dish, or seal bag, and marinate in the refrigerator for 4 hours.
- Place in a baking dish, spoon some of the yogurt mix over it. Bake chicken at 400F until it reaches 160F internal temp.

- Preheat the oven to 400 degrees F (200 degrees C). Coat a baking pan with cooking spray.
- Mix Greek yogurt, Parmesan cheese, seasoned salt, garlic powder, and ground black pepper together in a bowl.
- Arrange chicken breasts in a single layer in the prepared baking pan. Spread Greek yogurt mixture on top of chicken; sprinkle bread crumbs on top.
- Bake uncovered in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 40 minutes.

- Mix together the yogurt, mustard, garlic, ginger, and salt and pepper.
- Spread the mixture on the chicken, rubbing it in.

- In a small bowl, combine the seasonings, green onions, lemon juice, and yogurt.
- Pour the yogurt/seasoning mixture over the chicken breasts, turning them over to coat well with the yogurt mixture.

- Preheat oven to 375 degrees.
- In a food processor or blender, reduce the stuffing mix to coarse crumbs. Pour them onto a sheet of wax paper.
- Coat one piece of chicken breast with yogurt as thickly as possible (admittedly, this is a messy step), then dip it into the crumbs to coat.
- Lay the chicken in an oiled baking dish large enough to hold chicken and peaches in one layer. Repeat with the remaining chicken.
- Surround the chicken with the peach halves, cut side down. Sprinkle the peaches (not the chicken) with cinnamon sugar.
- Bake for 20 minutes, or until the breasts are just cooked through but not dry.
