FETA-YOGURT SAUCE
Steps:
- Using fork, mash feta cheese in small bowl. Mix in remaining ingredients. Season to taste with salt and pepper. Let stand 30 minutes to allow flavors to develop. (Sauce can be made 2 days ahead. Cover and refrigerate.)

Steps:
- In a blender or food processor, combine feta, yogurt, 1/4 cup olive oil, mint, lemon zest and juice; sprinkle with salt and pepper. Blend or process until smooth, adding more oil if you need it to reach a smooth consistency. You can also mash mixture by hand, with a fork.

CUCUMBER FETA SALAD DRESSING
Steps:
- Chop enough of cucumber to measure 1 cup and in a blender purée with feta, yogurt, and garlic until smooth. Transfer dressing to a bowl and season with pepper and salt. Chill dressing, covered, until cold, about 30 minutes. Dressing may be made 1 day ahead and chilled, covered.

I found this recipe years ago, but made it for the first time recently because it was on an index card I decided NOT to toss. This dressing was a HUGE hit at dinner.
