YORKSHIRE PUDDING
A yummy and traditional addition to the holiday feast. If you intend to make this, the timing has to be juuuuust right. I would suggest preparing the mixture the evening before, and having it ready while the roast beef is cooking. Originally submitted to ThanksgivingRecipe.com.

Steps:
- Mix flour and salt together until blended. Make a well in the flour, add the milk, and whisk until consistent. Beat the eggs into the batter. Add water and beat again until the mixture is light and frothy. Set aside for an hour (or, if it's the day before, cover in the fridge overnight).
- If the batter has been refrigerated, allow it to come up to room temperature before using. When the roast beef is ready to come out of the oven, ready the mixture.
- Preheat oven to 400 degrees F (205 degrees C).
- Pour off drippings from roast beef and measure out desired amount (about 1/2 cup should do). Pour drippings into a 9x12 inch baking dish and place into the oven until the drippings sizzle. Pour the batter over the drippings and bake for 30 minutes (or until the sides have risen and are golden brown). Cut into eight portions and serve immediately.

Steps:
- In a large skillet, cook beef and onion until beef is browned; drain.
- Add vegetables and 1/4 cup gravy.
- Stir water and Worcestershire sauce into remaining gravy; set aside.
- In a 10-inch pie plate, place butter and put into a 425°F oven.
- In a small bowl combine milk and eggs, add flour salt and pepper; beat until smooth.
- When butter is melted remove from the oven add the egg mixture into the hot dish.
- Spoon meat mixture evenly over bottom, keeping 1 inch from the edge.
- Return to oven and bake for 25-30 minutes or until browned and puffed.
- Heat gravy and pass with the pie.

- In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add vegetables and 1/4 cup of gravy; set aside. Place butter in a 10-in. pie plate and place in a 425° oven until melted. In a bowl, beat milk and eggs. Add flour, salt and pepper; mix until smooth. Pour into prepared pie plate. Spoon meat mixture to within 1 in. of edge. Bake for 30-35 minutes or until edges are puffed and a knife inserted in the center comes out clean. Meanwhile, in a saucepan, heat water, Worcestershire sauce and remaining gravy. Serve with the pie.

Steps:
- You will need 2 skillets for this dish; one should be a 10" skillet that is oven safe.
- Preheat the oven to 400.
- In one skillet, cook the beef, onions, salt, pepper, coriander, cumin and garlic until the beef is browned; drain.
- Put the 10" oven safe skillet into the oven until the pan is hot.
- Meanwhile, in a bowl, mix the flour with the salt.
- Set aside.
- In another bowl, mix the eggs and milk, and add to the flour mixture, beating until smooth.
- Pour half the batter into the hot skillet.
- Top with the meat mixture, then the rest of the batter.
- Return to the oven and bake for 40 minutes.

- Make the curd the night before. Heat the milk in a large pan. As it comes to a gentle simmer, add the lemon juice. Turn the heat to low and gently stir while the curds form. Do not stir too quickly or you will break up the curds. Once the mixture resembles watery liquid with creamy lumps in it, remove the pan from the heat and allow the curds to cool in the whey. Drain the curds overnight through a clean tea towel and save the whey for making scones, as you would buttermilk.
- To make the pastry, blend the flour, baking powder, butter, sugar and a pinch of salt in a food processor until the butter is almost all combined - leave a few small lumps of butter to lighten the dough. Tip the dry mix onto a work surface and make a well in the centre. Add a little cold water to make a smooth, but not sticky dough. As soon as the mixture comes together, knead very lightly, wrap in cling film and chill for at least 20 mins. Can be made up to 2 days ahead and chilled.
- To finish the filling, beat the butter and sugar until soft, then add the egg, a little bit at a time. Add the curds to the mixture and lightly whisk to break up any large lumps. Once blended, add the currants.
- Heat oven to 180C/160C fan/gas 4. Roll out the pastry to line a greased 20cm shallow pie dish or tart tin. Spread over the curd mix and bake for 35-40 mins until browned and the pastry is cooked. Leave to cool, then cut into slices and serve on its own or with a drizzle of cream.

- Melt the lard in the milk, bring to a boil, and pour into the flour. With a wooden spoon, mix together quickly to form a dough; it will be quite firm, somewhat like Play-Doh. Turn the dough out onto a lightly floured work surface, and knead until smooth. Cover loosely with plastic wrap, and let it rest on the work surface at room temperature for 20 minutes.
- To make the filling, season the turkey and chicken all over with salt and pepper. In a large sauté pan over medium-high heat, heat 2 tablespoons of the vegetable oil. Put the turkey breast in the pan, skin-side-down, and cook until browned. Remove from the pan, and set aside. Put the chicken in the hot pan, skin-side-down, and cook until browned. Remove from the pan, and set aside along with the turkey.
- Reduce the heat, and add about 2 more tablespoons of the vegetable oil to the pan, if necessary. Add the carrots, onion, and celery, and cook for about 5 minutes until softened, stirring frequently to keep from browning. Season with salt and pepper, and stir in the cloves. Add the wine, stirring to deglaze (to loosen the browned bits on the bottom of the pan), and simmer for about 5 minutes, until reduced by half. Transfer the vegetables to a bowl, and set aside to cool.
