DOUBLE CHOCOLATE WAFFLES - OAMC
More of a dessert than a breakfast. My kids love these for an evening snack. They are really good with fresh sliced berries!

Steps:
- Preheat waffle iron.
- In a small bowl, mix together the flour, cocoa, sugar, baking powder and salt.
- In a medium bowl beat egg yolks with milk and vanilla.
- Add melted butter, a little at a time, whisking the whole time so the eggs don't cook.
- Add dry ingredients and stir just until moistened.
- In another bowl, beat the egg whites until stiff peaks form.
- Fold the beaten whites into the waffle batter very gently so as not to deflate the egg whites.
- Stir in chocolate chips.
- Pour batter onto waffle iron using about 1/4 cup per waffle. Bake until waffles are cooked through and crisp. This will vary depending upon your waffle iron.
- Serve warm.
- to Freeze: Cool to room temperature and place waffles separated by waxed paper on a cookie sheet. Freeze until firm and then package in freezer bags.
- To serve: Remove from freezer bag and toast in toaster until crisp.

GREAT EASY WAFFLES
This recipe has been handed down in my family and has become a favorite. If you have leftover waffles, they are great to freeze and then toast at a later time. I usually make a double recipe and then have plenty of leftovers for the kids to have for breakfast before school.

- Preheat a waffle iron according to manufacturer's instructions.
- Whisk the flour, baking powder, sugar, and salt together in a mixing bowl; set aside. Beat egg whites until foamy in a separate large glass or metal mixing bowl. Whisk the egg yolks, lemon zest, and vanilla extract together in a third bowl; whisk in the milk. Stir in the flour mixture until smooth. Fold in the melted butter and then the beaten egg whites until just incorporated.
- Cook the waffles according to manufacturer's instructions until golden brown.

WHOLE WHEAT AND FLAX WAFFLES
The original recipe was made by my nana for years and years. Then my mom made it for me growing up, and now I make these waffles myself (but with a couple of healthy changes) They still taste just as good as the did when I was a kid. We serve them sometimes for breakfast, but in our family waffles have almost always been served for dinner. When you can't think of anything else to make.

Steps:
- Mix dry ingredients.
- Mix wet ingredients separately.
- Mix dry and wet together whisk until smooth.
- Pour about 3/4 of a cup of batter at a time onto the waffle iron.
- You will begin to see steam coming out of the iron.
- Cook the waffles until the steam is almost gone.
- Any waffles we don't eat right away get put into the freezer, and we pop them in the toaster for a quick breakfast or snack.
