AMISH YUMAZUTI

A real tasty dish, there are seldom any leftovers with this ground beef and noodle casserole.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place noodles in a pot of lightly salted boiling water. Cook until al dente, about 8 minutes. Drain and set aside.
  • Cook ground beef, onion, celery and garlic in a skillet over medium heat until meat is evenly browned. Drain off excess grease.
  • Butter a 9x13 inch baking dish. Place half of the cooked noodles in the bottom of the dish. Cover them with half of the meat mixture, then half of the tomatoes. Spoon half of the cream of chicken soup over the tomatoes, then sprinkle half of the shredded cheese. Repeat layers, ending with cheese on the top.
  • Bake for 1 hour in the preheated oven, or until cheese is browned and bubbly. Let stand for 10 minutes to set before serving.

YUMZETTI/ JOHNNY MARZETTI

A quick, easy, savory casserole. My grandmother always made this, and I loved it! I highly recommend making sure one or both cans of soup is low sodium, or it ends up tasting pretty salty, although you may prefer a higher sodium content. I also prefer to use ground turkey instead of beef; with all the other ingredients, it's impossible to tell the difference in taste.

Steps:

  • Preheat oven to 350 degrees.
  • Grease 13"x9" baking pan.
  • Cook noodles until tender, as per directions on package. (Usually 6-8 minutes.) Drain.
  • While noodles are cooking, brown ground beef/turkey.
  • In a separate (large!) bowl, mix together soups and tomato paste. Stir in browned meat, then prepared noodles. Mixture will be thick.
  • Dump the contents of the bowl into baking pan and smooth with spatula.
  • Layer cheese squares over casserole.
  • Cover pan with aluminum foil.
  • Bake at 350 degrees for 45 minutes, then remove foil and continue baking for 5-10 minutes, until more golden.

Tired of the nondescript? The Italian sausage and pepper jack cheese wake up the classic Johnny Marzetti casserole. This has zing, but it is not super spicy. Use your ground venison, no one will ever know it's not regular ground beef. Just what the Hunter ordered: a manly casserole.

Steps:

  • Bring a large pot of lightly salted water to a boil. Place the farfalle (aka bow ties) into the pot, cook 8 to 10 minutes, until al dente, and drain.
  • Peel Italian sausage and simmer in 24 ounces of beer for 10 minutes or until cooked through. Drain. Slice into 1/8" slices.
  • Preheat oven to 350 degrees Fahrenheit.
  • Lightly grease 11 x 7 x 2-inch baking dish (or 8x8-inch pan) and set aside.
  • Heat olive oil in a very large heavy skillet over moderate heat 1 minute.
  • Add onion and garlic. Stir-fry until limp, about 3 minutes.
  • Add mushrooms and stir-fry until juices are released and evaporate, about 5 minutes.
  • Add beef and cook and stir, breaking up clumps, until no longer red, about 5 minutes.
  • I usually drain the beef mixture in a fine mesh colander due to the volume of high water content onions and mushrooms.
  • Off heat, mix in tomato sauce, Italian sausage slices and all but 1 cup cheese.
  • Transfer to baking dish, add bow ties, and toss gently but thoroughly to mix.
  • Scatter remaining 1 cup cheese on top. (Add grated parmesan cheese if more is needed.).
  • Bake, uncovered, until browned and bubbling, 35-40 minutes, and serve.

Steps:

  • 1. brown hamburger. Cood noodles. Mixt together tomato paste and soups. Put in layers in casserole dish and bake at 350 for 45 minutes. Place slices of cheese on top and place back in oven til cheese melts.

Steps:

  • Preheat oven to 350 degrees.
  • Place noodles into pot of salted boiling water. Cook according to package directions. Drain and set aside.
  • Cook meat, onion, celery and garlic in a skillet until meat is thoroughly browned. Drain off grease.
