ZESTY SAUSAGE BREAKFAST FRITTATA
Easy to throw together, your family is going to love this breakfast recipe. It would be great for dinner or brunch too. The eggs are soft and cheesy. Green chilis add a bit of zest to the frittata. If you want more zip, add a few shakes of hot sauce. Yummy!

- 1. Preheat oven to 400 degrees.
- 2. In an ovenproof skillet (I used my medium sized cast iron skillet) cook and chop the breakfast sausage until browned and in small pieces. *** NOTE: Jimmy Dean sausage is very lean and has almost no fat that cooks out. If using a different brand or type of sausage, you may need to drain excess fat, at this point. ***
- 3. Add the diced onion and cook for a couple minutes more, until onions are translucent. Add the green chilies and stir to combine; remove from the heat and level out the meat mixture.
- 4. In a large bowl, crack the 6 eggs; add salt and pepper to taste. Whisk until well blended. Add the cheddar and 1/4 cup of the quesadilla blend cheese; stir to combine. *** NOTE: I personally did not add any salt, as the cheese and sausage have plenty, but did add a generous amount of fresh ground pepper. ***
- 5. Pour the egg and cheese mixture over the sausage mixture and cook in the preheated oven for about 15-20 minutes or until the eggs are set.
- 6. In the last few minutes of cooking, sprinkle the remaining 1/2 cup quesadilla blend cheese on top to melt. Remove from oven, slice in wedges and serve immediately.
HOT ITALIAN SAUSAGE AND BROCCOLI RABE FRITTATA
This is a substantial baked frittata that feeds a small crowd. Filled with spicy Italian sausage, flavorful greens and four kinds of cheese, it tastes best at room temperature, and it's perfect for a weekend late breakfast or any time of day.

- Heat oven to 350 degrees. Bring a large pot of salted water to boil. Add broccoli rabe and cook for 1 minute, just to wilt, then remove, rinse with cold water and drain. Roughly chop greens, then squeeze to remove excess water and set aside.
- Heat a 10-inch cast-iron skillet over medium-high heat. Add sausage (remove casings from links first) and cook, stirring and mashing, until sausage is in large, well-browned crumbled pieces, 6 to 8 minutes. Remove cooked sausage, blot on paper towels, and set aside.
- Add olive oil to skillet. When oil is hot, add onion and cook, stirring, until softened and lightly browned, about 5 minutes. Season well with salt and pepper, then add garlic and rosemary and cook for 1 minute more. Turn off heat and stir in chopped greens and reserved sausage. Let mixture cool in pan.
- Spoon dabs of ricotta over greens mixture, then sprinkle evenly with provolone, Parmesan and mozzarella. Pour seasoned eggs over, tilting pan to distribute.
- Bake for 30 to 35 minutes, until top is golden and eggs are no longer runny at the center. (Use a skewer or paring knife to check; residual heat will continue to cook frittata as it cools.) Let cool at least 15 minutes, then cut into wedges.

- Preheat broiler.
- Heat cast iron skillet with 1 tbsp oil on stove.
- Add onion, pepper, sauté over medium heat 4 minutes.
- Meanwhile beat eggs, milk, seasonings in bowl or large measuring cup.
- Add potatoes to pan salt and pepper to taste, sauté another 6 minutes.
- Add sausage to pan, sauté another minute.
- Turn down heat to medium low, add other tbsp oil, pour in egg mixture, sprinkle spinach on top.
- Cover and cook 10 minutes.
- Remove lid, with rubber spatula, loosen egg from sides of pan.
- Sprinkle tomato, cheese on top.
- Place under broiler about 6-8 inches from heat, broil 3-5 minutes, until slightly brown and bubbly.
- Cut into wedges.

- In a large bowl, crack the eggs and whisk them together with the paprika, garlic powder, salt and pepper. Set aside. Preheat oven to 425 degrees.
- In an oven-safe skillet or cast iron pan, heat the oil or bacon grease over medium-high heat. Add the chopped red peppers and sauté for 2-3 minutes, until they begin to soften. - Transfer the skillet with the frittata to the oven and let it bake for 9-10 minutes until the middle is set. If you are doing meal prep and plan to reheat the frittata later, try to undercook it just a little bit (maybe only 8-9 minutes). Then when you reheat each portion in the microwave it will be perfectly cooked.
