VITELLO PIZZAIOLA

I had bookmarked this recipe from Taste.com last week to make tonight and when I went to find it, it had been deleted from the website. It was actually a recipe from chef Tobie Puttock on Australia's "Ready Steady Cook" in June 2006, then published in Super Food Ideas Magazine and consequently added to the website. I Googled the recipe hoping it was printed on some other website, no, but I did find the date it had been published in the magazine so I searched through my much loved Super Food Ideas magazines for the correct date and found it :-) - dinner was late but it was worth it. Lovely fresh basil really compliments this dinner. I did sub mozzarella for the provolone.

Vitello Pizzaiola image

Steps:

  • Heat 1 tb oil in saucepan over medium heat and add onion and cook for 2-3 mins or until it begins to soften.
  • Add 1/4 cup of the basil leaves and the tomatoes and cook, stirring often for 5-6 mins or until heated through.
  • Add the garlic and cook for 4-6 mins or until sauce thickens.
  • Season both sides of the veal with salt and pepper then lightly coat in flour, shaking off excess.
  • Heat remaining oil in a non-stick pan over medium heat and cook in batches for 3-4 minutes each side (depending on thickeness - I cooked for 1/2 that time) until cooked to your liking.
  • Transfer to plates, top with cheese, tomato sauce and remaining basil.

1 red onion, halved and thinly sliced

400 g diced tomatoes, diced
2 garlic cloves, thinly sliced
4 (200 g) boneless veal leg steaks
1/4 cup plain flour
70 g provolone cheese, thinly sliced

PASTA PIZZAIOLA

This recipe came from my Mom. When my daughter was born she came to help out, armed with easy recipes which have become family classics. Use the jarred (or the deli) kalamata olives for this, don't skimp and use canned black olives. Sometimes I can not find the diced tomatoes with 3 cheeses. I sub. with plain diced tomatoes and a bit more parm. cheese.

Steps:

  • Cook Pasta per directions on box. Drain.
  • While pasta is cooking mix tomatoes, olives, garlic, anchovies, and oregano in medium bowl. Set aside.
  • In 2 1/2 quart shallow baking dish, combine mozzarella, olive oil, pepper flakes, and pepper. Mix well.
  • Add cooked and drained pasta to mozzarella mixture. Toss.
  • Top with tomato mixture.
  • Sprinkle with parmesan cheese.
  • Bake at 350 until heated through and cheese is all melty.
  • Finish under broiler if you like that browned look.

1/2 lb lowfat mozzarella cheese, diced
1 tablespoon olive oil
1/2 teaspoon crushed red pepper flakes (less if don't like hot)
1/4 teaspoon fresh ground black pepper
1/4 cup parmesan cheese, grated

Steps:

  • In large skillet over medium-high heat, stir together meat, mushrooms, green pepper, basil, oregano and garlic powder. Cook, covered, 5 minutes, stirring occasionally.
  • Stir in tomatoes with reserved juice, tomato sauce, onion soup mix and sugar.
  • Heat to boiling; reduce heat. Simmer, uncovered, 15 minutes, or until meat is thoroughly cooked.
  • Meanwhile, cook pasta according to package directions; drain.
  • Toss hot pasta and one-half sauce; spoon remaining sauce on top.
  • Sprinkle with cheese. Makes 12 servings (1 cup each)
