ZUCCHINI LOAF/MUFFINS
This is my mom's recipe and our family loves it. All the different spices give this lots of flavour and the zucchini makes it really moist.

Steps:
- Mix the eggs, sugar, zucchini, oil and vanilla together.
- Add the remaining ingredients and combine.
- Pour into greased pans.
- Bake in 350°F oven:.
- 2 loaves 50-60 minutes.
- 24 muffins 25 minutes.

BEST EVER ZUCCHINI MUFFINS
I got this recipe from my friend, who is a Health and Wellness teacher. They are super healthy and taste even better! Really easy to make too! :) You could also add nuts, or leave out the raisins. You could even substitute the zucchini with carrots! To preserve the nutrients, cool the muffins than freeze them immediately until you want to eat them. You can thaw them in the microwave for a few seconds, and they taste fresh from the oven!

Steps:
- Preheat oven to 350 degrees.
- Mix first 5 ingrediants ( flour - cinnemon ).
- In a seperate bowl, mix remaining ingrediants.
- Add the flour mixture and stir just until combined.
- Pour into paper-lined muffin tins and bake 25 - 30 minutes, or until a toothpick inserted in the center comes out clean.

- Pre-heat oven to 350 degrees, and grease 2 loaf pans.
- Mix eggs, oil and sugar and beat until creamy.

CREAM CHEESE ZUCCHINI BREAD (LOAF AND/OR MUFFINS)
This was a forgotten recipe in Private Recipes folder. I vaguely remember working on it a year or so ago! I tried it out again this morning, and it's very good if I do say so myself. I use Splenda and low fat ingredients and am posting it that way for the nutritional info, but feel free to use regular ingredients if you desire. This makes two loaves so you can eat one and give one away or freeze for later use. When I made it this morning, I made a loaf and 10 muffins. Because I was using it as a breakfast bread I left out the brown sugar to make it less sweet. For a sweeter, snack type bread, make as written. Hope you enjoy!

- Preheat oven to 350 degrees. Greas and flour 2 9x5 loaf pans.
- Beat eggs, sugar, oil and vanilla 2-3 minutes until smooth.
- Add cream cheese and beat until blended.
- In a separate bowl, combine dry ingredients.
- Slowly add flour mixture to egg mixture, beating constantly until combined.
- Fold in nuts and zucchini.
- Pour evenly into prepared pans and bake for 1 hour or until a toothpick inserted in center of loaf comes out clean.
- Cool for 10 minutes in pan before turning out.

ZUCCHINI LOAF
A nice moist loaf and a great way to use some of the zucchini that is growing faster than I can use at this time of the year. If you don't have a convection oven bake for 45 minutes. I like to sprinkle a sugar/ cinnamon mixture on the top of each loaf.

Steps:
- Shred zucchini and put into a strainer and press or squeeze with hands to get excess liquid out.
- Beat eggs, sugar, and apple sauce together.
- Add flour, baking powder, soda, cinnamon, salt, vanilla, and nuts.
- Mix together by hand.
- Add zucchini (minus liquid).
- Beat mixture.
- Pour into 3 greased and floured loaf pans.
- Bake 35 minutes at 350°F on Convection setting.
