BRITISH BACON BUTTY/ SANDWICH

A bacon sandwich is a very British breakfast. This is my favourite version of it. The type of bacon to use is back bacon, not the typical American streaky bacon. Everyone has their favourite version of this recipe- this is just my take on a classic! My nephew is a picky eater and this sandwich was his first ever taste of bacon! To make this Weight Watchers friendly, I sometimes use the bacon medallions that have the fat trimmed off- if using these, reduce the cooking time so they don't dry out. This is also excellent served in a white roll with a fried egg.

British Bacon Butty/ Sandwich image

Steps:

  • Preheat the oven grill to medium-high and cook the bacon until done- crisp but not dry. This should take 5-10 minutes.
  • Spread a thin layer of mayonnaise over one side of each slice of bread.
  • Top the mayonnaise with a thin layer of ketchup.
  • Place the bacon on one slice of bread and top with the other slice of bread.
  • Cut in half diagonally and serve hot!
  • NB Best served with a hot cup of tea!

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a sheet pan with parchment paper and place a baking rack on the sheet pan. Arrange the bacon in one layer on the baking rack. Bake for 25 minutes until it's deep golden and crispy. Transfer the bacon to a plate lined with paper towels.
  • Toast the bread slices and slather them with butter.
  • Arrange 4 slices of bacon on every other slice of bread and top with second slice of bread to make four sandwiches. Slice each sandwich in half diagonally and serve.

16 slices (1 pound), uncured Applewood smoked bacon
3/4 loaf good bakery white bread, cut 1/2 inch thick
Unsalted butter

GARLIC BACON BUTTIES

Steps:

  • Heat a griddle or frying pan, then cook the bacon for 3 mins each side or until golden and crisp.
  • Cut 6 thick slices from the loaf and butter each one on one side. Spread the chutney evenly over 3 slices of the bread and top each with 2 rashers of bacon. Top with the other slices of bread, buttered side down, then press together well.
  • Return the butties to the pan over a medium heat (you'll have to do this in batches), then toast for 2-3 mins each side until golden. Remove from pan, then rub both sides with cut side of the garlic clove. Cut the butties in half and serve straight away.

  • 1. Grill or fry the bacon to your liking but not too dry and crisp.
  • 2. Put it between the slices of bread and spread with HP sauce or whatever you choose.
  • 3. Slice in half and enjoy.
  • 4. Substitutions: Not traditional but you could add a slice of real cheese (not cheese food); different breads or rolls; different sauces such as chili sauce or dijon mustard.
