Steps:

  • Preheat the oven to 400 degrees F.
  • For the crisp: Mix together the flour, brown sugar, cinnamon and salt in a bowl. Using a pastry blender, 2 knives or a food processor, cut in the butter. Stir in the oats.
  • For the fruit: Toss the fruit with the cornstarch, granulated sugar as needed and the lemon zest if using.
  • Transfer the fruit mixture to a baking dish and top with the crisp mixture. Bake until the middle is warmed through and the top is crispy and golden brown, 50 to 55 minutes.

1 part all-purpose flour (we used 1/2 cup)
1/2 part brown sugar (we used 1/4 cup)
Pinch cinnamon
Pinch salt
1 part cold unsalted butter in cubes (we used 1/2 cup)
1 part rolled oats (we used 1/2 cup)
About 6 parts fruit (we used 3 cups sliced peaches, or about 8 peaches; see Cook's Note)
1 teaspoon cornstarch per 1 cup fruit (we used 3 teaspoons)
Granulated sugar, depending on the sweetness/ripeness of the fruit
Lemon zest, if desired

EASY 4 INGREDIENT CRANBERRY CRISP

What a great and easy dish to prepare for the holiday season. It's simple enough for every day but impressive enough for guests. Don't limit yourself to just major holidays though. This can be made year round! **ADDING** If I were to make this again, I would definately go a little easier on the sugar, maybe to 3/4 cup. I may also use 2 cans of cranberries just for height/presentation out of the oven. Really good though!

Steps:

  • Start a pot of water to boil.
  • Fill sink or bowl with cold water.
  • When water is boiling, drop nectarines and peaches into water for about 30 seconds. Take them out and immediately drop into cold water.
  • Skins will slip right off, so peel off the skin. You don't need to do this for the plums.
  • Slice the plums and peaches and put into a bowl. Sprinkle with flour and 1/4 cup baking splenda. (These are more tart, so you need the sweetener, however if you use a sweeter fruit skip or reduce the sweetener.).
  • Pop into a prepared (spritz with Pam) shallow baking dish.
  • Put rest of ingredients into a food processor or mix by hand, cutting in the butter (it should be cold) so that you get little pea sized butter pieces. You won't get as much as with other recipes, but I like to watch my saturated fats.
  • Bake at 350 for 35 minutes. Since there is not as much butter in the strudel, you may want to turn on the broiler for about 5 minutes to toast the top a bit.
  • Serve warm, but not hot.

Steps:

  • Preheat the oven to 375*F. Prepare fruit: slice large fruit (like apples and strawberries) and keep small fruit (like blueberries) intact. Toss fruit with 1/4 cup flour and 3/8 cup sugar, and pour into a deep baking dish (roughly 9" x 13" x 2").
  • For the topping: mix 1 cup flour and 1/2 cup sugar together in a food processor. Add the butter pieces, and pulse until crumbly; the biggest clumps should be 2-3 inches. Turn off the processor and break the largest clumps with your hands, so that the pieces range from 1/4-inch to 1-inch in size. (If you don't have a food processor, you can use a fork instead.).
  • Pour the crumbles over the fruit, and bake the crisp. If using berries/soft fruit: pour crumbles over the fruit and bake 30-40 minutes, uncovered. If using apples/firm fruit: bake 20 minutes covered with foil (or until fruit starts softening), then pour crumbles over top and cook for 30-40 minutes uncovered.
  • When done, fruit should be cooked and crumbles browned. Cool for about 15 minutes, and serve warm. Crisp stores well, covered in the fridge, for up to 5 days.
