OATMEAL COOKIES WITH PEANUTS, RAISINS AND CHOCOLATE CHIPS

This oatmeal cookie delivers the highlights of trail mix: peanuts, raisins, chocolate chips and coconut flakes.

Oatmeal Cookies with Peanuts, Raisins and Chocolate Chips image

Steps:

  • Preheat the oven to 375 degrees F.
  • Spread the coconut on a rimmed baking sheet and toast, stirring occasionally, until golden brown, about 5 minutes; set aside to cool.
  • Meanwhile, whisk together the flour, baking soda, cinnamon, salt and nutmeg in a medium bowl.
  • Beat the butter, brown sugar and granulated sugar in a large bowl using an electric mixer on medium speed until creamy. Beat in the eggs, one at a time, until incorporated. Beat in the milk and vanilla until blended. Reduce the speed to low and gradually beat in the flour mixture. Beat in the oats, peanuts, raisins, chocolate chips and toasted coconut.
  • Drop the dough by heaping tablespoons onto ungreased baking sheets. Bake, rotating the baking sheets halfway through, until golden brown, about 12 minutes. Cool the cookies on the baking sheets for 3 to 5 minutes and then transfer to wire racks to cool completely.

Steps:

  • Preheat the oven to 350°F. In a large bowl, cream the butter, egg, and vanilla extract. Add the contents of the jar, and stir until well mixed. Drop the dough by heaping teaspoonfuls onto an ungreased baking sheet, spacing the cookies about 2 inches apart. Bake for 8 to 10 minutes or until light brown in color. Allow to cool for 5 minutes on the baking sheet. Then transfer to wire racks and cool completely. Serve immediately, or store in an airtight container for up to 2 weeks.

In addition to the contents of
the jar, you will need to add
the following ingredients:
2/3 cup butter, softened
1 egg
1 teaspoon vanilla extract

WALNUT AND RAISIN COOKIES

These are wonderful cookies from my mum's book Called Nita Mehta's Oven recipes. My cousin Shilpa made them first and had to make these too!!! I have just discovered that Icing sugar is called powdered sugar out in the west. I'd like to clarify that the powdered sugar in this recipe is just sugar granules ground fine into a powder to facilitate easy and faster dissolving. :)

Steps:

  • Preheat oven to 325°F/ 160°C.
  • Cream the butter and sugar together.
  • Add the egg slightly beaten and the vanilla essence.
  • Sift the baking powder and the flour together.
  • Add the dessicated coconut, walnuts and the raisins to the flour and mix with your hand.
  • Now add this to the butter mix and fold gently.
  • Put spoonfuls of the batter 1 inch apart into a prepared (greased or covered with butter paper) baking tray and flatten slightly.
  • Bake for 20 minutes or till light golden brown.
  • Cool for 5 minutes.
  • Now take them out of the tray and cool completely on a wire rack.
  • Store in a air tight container.

Steps:

  • 1. Preheat the oven to 350°F. 2. Place all of the jar ingredients in a medium-sized bowl, and stir until well combined. Set aside. 3. Place the butter, egg, and vanilla extract in a large bowl, and cream with an electric mixer set on low speed or with a fork. 4. Add the dry ingredients to the butter mixture, and blend with a mixer set on low speed or with a spoon until well combined. 5. Drop the dough by heaping teaspoonfuls onto an ungreased baking sheet, spacing the cookies about 2 inches apart to allow for spreading. 6. Bake for 8 to 10 minutes, or until light brown in color. Allow to cool for 5 minutes on the baking sheet. Then transfer to wire racks and cool completely. 7. Serve immediately, or store in an airtight container for up to 2 weeks. CREATING THE JAR1. I ran across this recipe in one of my mom's old magazines. Thought it sounded interesting, checked to make sure I had all the ingredients on hand and made them over the weekend. My kids really loved these cookies. The nutmeg, cloves and cinnamon really gives it that zip. I used walnuts in stead of pecans, just a personal choice. I am making these for our family reunion on the 22nd. Even though I am hostessing the reunion again, I still like to bring something to nibble on. Last year it was my grandmother's cinnamon pies this year it is cookies. I Hope you enjoy them.

  • Preheat oven to 350°F. Lightly butter 2 heavy large baking sheets. Soak raisins in enough hot water to cover until soft, about 15 minutes. Drain; set aside.
