ABC CHICKEN NOODLE CASSEROLE

Designated an ABC Casserole, because we found it so easy to prepare...Of particular note is the fact that it doesn't require any cream-of-whatever soup...I also like the kicky taste from the green olives (a favorite)...Serve with a tossed green salad for a nice meal!

Steps:

  • Cook the egg noodles per pkg and drain.
  • In a bowl, combine the cottage cheese, sour cream, 4 tbsp of the parmesan, salt and tabasco sauce (if you like more 'kick', add more tabasco).
  • Stir in the olives, chicken and the egg noodles.
  • Pour into a greased 2 quart baking dish/pan and sprinkle the top with the remaining parmesan.
  • Cover and chill 1 hour; then bake, covered, in the preheated 350°F oven for 35 minutes.
  • Then uncover the casserole and bake for 25 minutes more.
  • Variation: Use a different pasta such as fettucine.

3 cups medium egg noodles, uncooked (whole wheat, if available)
1 cup 1% fat cottage cheese, small curd
1 cup low-fat sour cream (Cabot Light preferred)
6 tablespoons parmesan cheese, grated (Kraft Reduced Fat, if available)
1 teaspoon salt (optional)
1/4 teaspoon Tabasco sauce
1/4 cup green olives, sliced
3 cups cooked chicken breasts or 3 cups cooked turkey breast, diced

CHICKEN NOODLE CASSEROLE

Another "go to" recipe for me - the kids love it. I often assemble the night before and have one of my kids or the hubby put it in the oven the next day. I used Reams Golden Ribbons frozen egg noodles. The milk measurement is an estimate since I usually just pour some in. You can also add buttered croutons or breadcrumbs to this just before putting it in the oven. For the make ahead crowd - I often cook the chicken up over the weekend, cool and put in the freezer with the bag of egg noodles.

Steps:

  • Cook egg noodles according to package directions. Drain.
  • Melt butter in frying pan. Add cubed chicken, salt and pepper. Saute until brown and completly cooked. I always brown this up quite a bit otherwise the casserole can be bland.
  • Coat casserole dish with non-stick cooking spray. Combine ingredients. You may top with buttered croutons or breadcrumbs if desired.
  • Bake covered at 350 for 45 minutes. If using croutons or breadcrumbs remove cover when there are approx 10 minutes left to bake.

Steps:

  • Poach chicken in a large pot of simmering water. Cook until no longer pink in center, about 12 minutes. Remove from pot and set aside. Bring chicken cooking water to a boil and cook pasta in it. Drain. Cut chicken into small pieces, and mix with noodles.
  • In a separate bowl, mix together mushroom soup, chicken soup, and sour cream. Season with salt and pepper. Gently stir together cream soup mixture with the chicken mixture. Place in a 2 quart baking dish.
  • Melt butter in a small saucepan, and remove from heat. Stir in crumbled crackers. Top casserole with the buttery crackers.
  • Bake at 350 degrees F (175 degrees C) for about 30 minutes, until heated through and browned on top.

Easy Weeknight Chicken Noodle Casserole image

Steps:

  • Preheat oven to 375 degrees.
  • Cook egg noodles and frozen vegetables according to directions on noodle bag.
  • In medium bowl, combine the two soups, chicken, onion flakes, garlic powder, and thyme. Add salt and pepper to your liking. Mix well.
  • When noodles and vegetables are done cooking, drain well and return to pot. Mix margarine into noodles.
  • Add soup mixture to pot with noodles. Mix well and pour into 2 quart round casserole.
  • Sprinkle with the fried onions. Put in oven, and bake for 20 minutes, or until fried onions turn golden.
  • {For a lower-fat meal, omit margarine and use low-fat soups.}
