CAJUN SMOTHERED CORN
From the Seattle Times newspaper, a simple and tasty side dish. This can be prepared ahead of time and rewarmed before serving. Do not add the bacon or lime juice until just before serving.ZWT South region (Cajun) and Mid-West region (corn).

Steps:
- Put bacon into saucepan, set over medium heat and fry until crisp.
- Remove the bacon with a slotted spoon to a paper towel-lined plate.
- Crumble bacon; set aside.
- Add onion, bell pepper, celery and garlic to pan.
- Saute‚ 3 minutes.
- Cover pan; cook 5 minutes.
- Add corn, tomatoes, paprika, basil, thyme, cayenne, salt and pepper.
- Cook over medium heat, stirring often, for 5 minutes or until corn is heated through and flavors have blended.
- Add bacon and lime juice.
- Stir 1 minute; serve.
COD SMOTHERED IN MUSHROOMS
I had some left over sauteed mushrooms and a 1/2 pound boneless cod filet, so I decided to try something different. The fish was moist and the topping was flavorful.

Steps:
- Preheat oven to 400 degrees F.
- Crush crackers with rolling pin finely in a plastic bag.
- In a frying pan, saute sliced mushrooms in 1 tablespoon of butter until tender.
- Melt one tablespoon of butter (I use the microwave at 20 sec. intervals).
- Drizzle melted butter into baking dish.
- Cut the cod filet into 4 equal pieces and place into baking dish.
- Melt one tablespoon of butter and drizzle it over the fish.
- Cover fish with cracker crumbs.
- Cover cracker crumbs with sauteed mushrooms.
- Sprinkle basil and cheese over mushrooms.
- Bake in oven for 15 minutes or until fish flakes with a fork.
- Enjoy!

SMOTHERED FRESH CORN

- Saute in oil, onions until brown, about 10 minutes.
- Add 1/4 c water.
- Cook for 5 minutes.
- Stir in tomato sauce, simmer for 20 minutes.
- Add 1/2 c water.
- Cook 10 minutes more.
- Add corn, water, sugar and salt.
- Cook for about 40 more minutes.
- Add pepper to taste.

- In small bowl, mix mayonnaise, onion and pickle relish. Cover; refrigerate.
- Meanwhile, in shallow dish, mix flour and salt. In another shallow dish, beat eggs and water with fork. Place crushed cereal in third shallow dish. Dip fish in flour, coating well; shake off excess. Dip floured fish in egg mixture, then in cereal, coating all sides completely. Place coated fish on ungreased cookie sheet.
- In 12-inch nonstick skillet, heat oil over medium heat until hot. Keeping at least 1 inch between fish fillets and cooking in batches if needed, cook fish in oil 3 to 4 minutes on each side, turning once, until well browned and fish flakes easily with fork. Serve fish topped with sauce.

- Melt butter in a large skillet with a lid over medium heat. Add garlic, coriander seeds, and cumin seeds and cook, swirling pan often, until butter is foaming and spices are very fragrant, about 2 minutes (reduce heat if butter is starting to brown). Add red pepper flakes, turmeric, a big pinch of salt, and several grinds of pepper. Cook, swirling pan, until very fragrant, about 30 seconds. Add ½ cup water (careful, it may spatter a bit), then soy sauce.
- Add corn to skillet. Season fish lightly with salt and nestle into corn and broth; bring to a simmer. Reduce heat, cover, and simmer gently until fish flakes easily with a fork, 7-9 minutes.
- Divide fish among bowls. Taste broth and season with more salt if needed. Divide corn and broth among bowls and top with mint and sesame seeds.

- Preheat the oven to 400 degrees F.
- Divide the fish into 4 even pieces.
- Pour the cornflake crumbs, bread crumbs, and the spices into a shallow, wide bowl and mix.
- Beat the egg whites in a separate bowl and dip each piece of fish into the egg and then into the crumb mixture to coat. Repeat for each piece of fish.
- Use non-stick cooking spray to coat a baking sheet and place the fish on the sheet and bake for 8-10 minutes, until done. Serve with lemon wedges.
ACADIA'S COD SMOTHERED IN CORN FLAKES
My kids and DH always ask me, "What's for dinner?" Now they will ask me that question anytime during the day from just after breakfast until just before dinner. Usually I tell them anything that comes to mind. LOL! And then I serve something totally different (they never learn). So today when they asked the question I told them left over lamb roast when in fact I was really thinking of something to do with Cod. Here is what I came up with. . .
