ADAM'S COFFEE GARLIC DRY RUB FOR PORK

This dry rub goes great on a Boston pork butt or ribs. If you are having a hard time finding any ingredients, try Penzey's Spices.

Adam's Coffee Garlic Dry Rub for Pork image

Steps:

  • Mix all ingredients together, making sure there are no lumps.
  • Store in airtight container.

1 cup brown sugar
1/4 cup spanish smoked paprika
3 tablespoons coarse sea salt
2 tablespoons coarse black pepper
2 tablespoons minced dried garlic
2 tablespoons minced dried onion, toasted
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon dried thyme
4 tablespoons ground coffee (not instant)
4 tablespoons dried aleppo pepper or 4 tablespoons ancho chilies, if you can't find aleppo
1 tablespoon celery salt

COFFEE-RUBBED PORK TENDERLOIN WITH GREEN BEANS

A robust rub adds major flavor to lean, quick-cooking pork tenderloin. The finely ground coffee lends a pleasant bitter note that is tempered by brown sugar and dried spices. The addition of green beans makes this a one-pan meal that can be on the table in no time at all.

Coffee-Rubbed Pork Tenderloin with Green Beans image

Steps:

  • Position an oven rack in the top third of the oven and preheat the broiler to high.
  • Combine the coffee, brown sugar, 1 1/2 teaspoons salt, 1 teaspoon black pepper, garlic powder, crushed red pepper, cumin and paprika in a small bowl and mix well. Drizzle the pork tenderloin with 2 tablespoons olive oil and evenly sprinkle the rub all over, patting to adhere. Let marinate at room temperature for 30 minutes.
  • Toss the green beans in a large bowl with 3 tablespoons olive oil, 1 teaspoon salt and 1/4 teaspoon black pepper until well coated.
  • Put the pork in the center of a large cast-iron skillet or heavy ovenproof skillet and scatter the green beans around it. (The pork should be directly on the pan, not on top of the green beans.) Broil for 10 to 12 minutes, flipping the pork and tossing the green beans halfway through cooking. When ready, an instant-read thermometer inserted in the center of the pork should register 145 degrees F and the green beans should be tender and lightly charred.
  • Allow the pork to rest for 10 minutes before slicing across the grain. Serve with the green beans.

  • Mix paprika, brown sugar, salt, garlic powder, black pepper, chili powder, cayenne pepper, onion powder, ground chipotle chile pepper, cumin, and mustard powder together in a bowl.

I don't remember where I found this recipe but it was somewhere out there in cyberspace about 5 or 6 years ago. It has been a family favorite ever since I first made it. I have made few changes to it over the years. Once in awhile I add grilled peach halves to it as a side dish and a peach/mango chutney for a summertime dish....

Steps:

  • 1. Place ribs in large stock pot and pour Dr. Pepper over ribs to cover
  • 2. Add garlic, liquid smoke and onion
  • 3. Bring to a boil, lower to simmer and cook until ribs are tender.(This could take an hour to an hour and 15 minutes)
  • 4. Place ribs in baking pan and pour BBQ sauce over ribs
  • 5. Bake at 350 degrees for about 30 to 45 minutes
  • 6. You can grill them instead of baking if you choose!

8 country style pork ribs
2 liters dr. pepper
6-8 clove garlic lightly smashed
1 Tbsp liquid smoke
1 large onion quartered
1 bottle your favorite barbeque sauce (or your favorite homemade)
