AFTER DINNER MINT ICING
I came up with this recipe by accident when some mint icing I made tasted too "toothpastey". Add some unsweetened chocolate, and hey presto, you've got a delicious after dinner mint taste that goes well with any chocolate based cake! Mmmm...

- 1. Melt chocolate in microwave at a medium heat, stirring every 30 seconds until almost melted. It will continue to melt after being removed from the microwave, so don't overcook it. Leave that to cool for 5 minutes.
- 2. Beat butter/margarine with, 2 cups of confectioners sugar until fluffy. Add salt, mint extract, milk/cream, melted chocolate, and the remaining 2 cups of sugar; and beat on high speed until well blended.
- 3. This should give you a perfect piping consistency. Add more or less milk/cream to meet your particular cake decorating needs.

- In a large bowl, cream butter and sugars until light and fluffy. Beat in milk and egg. Combine the flour, cocoa, baking powder, baking soda and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 2 hours or until firm. , On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a 1-1/2-in. cookie cutter and place 1 in. apart on greased baking sheets. Bake at 375° for 5-6 minutes or until edges are lightly browned. Remove to wire racks to cool completely. , Combine filling ingredients; spread on bottoms of half of the cookies and top with remaining cookies.

- Lightly spray baking sheet. Place sugar, water, corn syrup, butter and salt in a large saucepan. Cook over medium high heat, stirring occasionally, for 10 minutes, or until it reaches 270 degrees F. (When a small amount is dropped in ice water it will form threads that will bend.) Take off heat, let stand until it stops bubbling.
- Pour the mixture onto prepared cookie sheet and let stand for 5 minutes, or until cool. Drizzle peppermint flavoring and food coloring over candy. Dip fingers in cornstarch and pull candy straight without twisting. Keep on folding and stretching until it looks creamy. Stretch candy into a 1/2 inch rope.Pour powdered sugar into the baking pan. Cut the candy into 1/2 inch pieces and toss in sugar to coat. let stand overnight.
