ALBORONIA POTAGE

this casserole is used using pumpkin and chickpeas, using lots of garlic to give it a nice tang and is quite filling

Steps:

  • Place all the ingredients in a casserole, add enough water to cover, and boil for 1 and a half hours, lowering the heat after 1 hour.
  • serve warm.

1 lb pumpkin, cubed
1/2 lb tomatoes
1 bay leaf
8 garlic cloves, grilled
1 onion, chopped
1 lb chickpeas (soaked overnight)
25 ml olive oil
2 large potatoes, cubed

You can prepare this side dish in the morning, then put it in the oven later.

Herbed Scalloped Potatoes and Onions image

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 2 1/2-quart baking dish.
  • Layer potatoes and onion in prepared baking dish.
  • Melt butter in a saucepan over medium heat; stir in flour until smooth. Gradually add broth, mayonnaise, garlic, salt, parsley, poultry seasoning, and pepper; cook and stir until thick and bubbly, about 2 minutes. Pour mayonnaise mixture over potatoes and onion. Cover baking dish with aluminum foil.
  • Bake in preheated oven until potatoes are tender, about 1 hour 45 minutes. Remove foil and continue to bake until golden brown, about 15 minutes more. Sprinkle with chives to serve.

Cook, stirring occasionally, until the vegetables are tender, about 8-10 minutes. Add the garlic, thyme sprigs, bay leaves, and sweet potato. Season with more salt and pepper. Cook, stirring, 1-2 minutes. Pour in the water. Bring the soup to a boil. Reduce the heat to a simmer and cook until the sweet potatoes and vegetables are tender, about 10-15 minutes. (While the soup cooks, make the cheesy baguettes—see below.)
  • Ladle the soup into serving bowls and garnish with finely chopped nuts, if you'd like. Serve the soup with the cheesy baguettes on the side for dunking.
