ALMOND BARS

"This is one of my favorite recipes for last-minute school bake sales," writes Sandy Kerrison from her home in Lockport, New York. "The cake-like snacks are the first items to go...that is, if they're not grabbed by a teacher first. I also include them in Christmas cookie gift baskets."

Almond Bars image

Steps:

  • In a large bowl, beat the eggs and sugar until lemon-colored. Beat in butter and extract; gradually stir in the four and mix well. Spread into a greased 13x9-in. baking pan. , Bake at 325° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Sprinkle with confectioners' sugar.

ALMOND POWER BAR

These no bake, high-protein, high-fiber bars are based upon Melissa Diane Smith's recipe for Amaretto Protein Bars in her book Going Against the Grain and are a cinch to make. The chocolate topping makes them seem a bit decadent (skip it if you must, they'll still come out fine) - though dark chocolate, rich in anti-oxidants has now entered the echelon of power foods so I'll keep it on mine. Almond Power Bar image

Steps:

  • Place almonds, flax meal, shredded coconut, almond butter and salt in a food processor.
  • Pulse briefly, about 10 seconds.
  • In a small sauce pan, melt coconut oil over very low heat,.
  • Remove coconut oil from stove, stir stevia, agave and vanilla into oil.
  • Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste.
  • Press mixture into an 8 x 8 glass baking dish.
  • Chill in refrigerator for 1 hour, until mixture hardens.
  • In a small saucepan, melt chocodrops over very low heat, stirring continuously.
  • Spread melted chocolate over bars; return to refrigerator for 30 minutes, until chocolate hardens.
  • Remove from refrigerator, cut into bars and serve.

2 cups almonds (raw)
1/2 cup flax seed meal (flax seeds ground in a blender)
1/2 cup unsweetened dried shredded coconut
1/2 cup almond butter (roasted tastes better)
1/2 teaspoon celtic sea salt
1/2 cup coconut oil
4 drops stevia
1 tablespoon agave nectar
1 tablespoon vanilla extract
1 cup dagoba chocolate chips (chocodrops) (optional)

These bars are so delicious it's hard to have just one. Bars are so expensive now-a-days and the most of the ingredients listed on the package I don't even know how to pronounce, so I decided to come up with my own recipe so I know what kind of ingredients I am feeding my family.

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  • Place the oats, almonds, walnuts, and soy nuts into a food processor. Pulse until finely ground; pour into a large mixing bowl. Whisk in the brown rice cereal, dry milk, wheat germ, raisins, chocolate chips, flax, cinnamon, and salt; set aside.
  • Beat the egg whites until frothy in a small bowl; stir in the canola oil, honey, and vanilla extract and pour into the dry mixture. Stir until evenly moistened and press into the prepared pan.
  • Bake in the preheated oven until the mixture is hot, 15 to 20 minutes. Remove the power bar mixture by lifting the foil out of the pan. Allow to cool slightly; remove the foil and cut into bars while still warm. Allow to cool completely on a wire rack before serving. Store in airtight container, or freeze in plastic snack bags.

  • Pour this mixture into the prepared baking pan. Using a rubber spatula, smooth into a tightly packed, even layer. Bake for 30-40 minutes (mine took 35 mins). Bars must bake thoroughly, or they won’t hold together when cooled.
  • Allow to cool for 1 hour, or until completely cooled. Use a heatproof spatula to gently lift and loosen bars from parchment. Slice into 12 bars (6 rows by 2 columns). Enjoy! Storing instructions below.
