ALMOND FILLING
Steps:
- Combine sugar, cornstarch, and salt in saucepan. In a separate bowl beat eggs and mix together with milk. Stir into dry mixture. Cook over medium heat, stirring constantly, until thick and bubbling. Cook for 2 minutes more. Remove from heat, add almond liqueur and stir well. Cover surface of filling with plastic wrap to prevent film from forming and chill completely before using.

ALMOND "CALZONES" (PIE FILING)
This is my version of Grandma W's almond slices she used to make and send to me every Christmas since I didn't like the traditional fig filling for Cucudatti. I made this easier to handle with encasing the filling in a biscuit round to make little calzone shapes. :)

- NOTE: This is 5 recipes of Biscotti, Seeded, and can fit 2 at a time in a kitchenaid mixer bowl. You will need three bowls.
- Put margarine in the mixer bowls to soften. Add sugar and mix together. Add flour, powder and vanilla, mix. Add whole egg and egg yolk. When well mixed, cover with foil and refrigerate overnight. Original recipe said for 2 hours, but I prefer overnight.
- Roll out, making sure you have lots of flour on hand. As it warms up, it gets sticky again, so I had to roll with lots of additional flour. Cut out with the biscuit cutter Barb gave me.
- Put a very small spoon of the almond pie filling on each dough round (I put them onto wax paper until all cut out before filling).
- Fold over into a crescent shape, what I call a calzone, and push edges together. Put onto ungreased baking sheet.
- Bake at 375 degrees 20-23 min, until firm. Bottoms will be slightly browner than tops. Remove immediately from baking sheets. Put onto baking rack to cool.
- Make a glaze to your flavor preference, glaze cookies, let glaze harden before boxing up. Can also be frozen, but if you do, make sure to put wax paper between layers (that's how Grandma did it when she sent them to me!).
APPLE ALMOND PIE

- Preheat oven to 350 degrees F (175 degrees C). Press 1 pie crust into a 9-inch pie pan.
- Toss apples, almonds, white sugar, brown sugar, and flour together in a bowl until apples and almonds are completely coated.
- Mix honey, egg yolk, water, and almond extract together in a microwave-safe dish.
- Microwave honey mixture, stirring every 15 seconds, until mixture is melted and smooth, 30 to 45 seconds. Pour honey mixture over apple mixture and toss to coat. Transfer apple mixture to the prepared pie crust; sprinkle filling with cinnamon. Top pie with the remaining pie crust and pinch edges together to seal.
- Bake in the preheated oven until crust is lightly browned, 45 to 50 minutes.

- 1. Once you've blanched the almonds they will need to be dried. I place them on a cookie sheet lined with parchment paper and place them in an oven with just the heat of the pilot light. If you have an electric oven, heat oven on low and then turn off the oven, then place the almonds on the try in. Leave the door open. Leave them, but turn them over to dry all sides. Ingredients 1 cup blanched almonds 1/2 cup powdered sugar (sifted) 2 tablespoons organic or European unsalted butter, room temperature 1/2 teaspoon almond extract or almond oil 1 large egg whites, lightly beaten Directions Put almonds, sugar and butter into food processor. Process until almonds are finely ground, scraping bowl as necessary. Add almond extract and 2 Tbl of the beaten egg white. Process until mixed. Store in airtight container in the refrigerator until needed (up to 1 week). Bring to room temperature before using.
