This is one my DH makes for almost every Pitch-In Party. We have never had any left to take home. Any of your favorite finely chopped nuts would be fine. Parsley would work, if there are allergies.

- Mix first 4 ingredients in small bowl.
- Push into ball shape with spatula.
- Refrigerate until firm.
- Quickly round into smooth ball with hands.
- Roll in pecans.

AWARD WINNING CHEESE BALL
Steps:
- Mix the cream cheese, Old English Spread, Bacon Spread, and vinegar in a bowl with a blender. Using a spoon will also work, but using your blender will cut the time in half, and the mixture will be nice and creamy. When everything is mixed, start to add the garlic and onion salt to taste. Start off small, and work your way up towards a flavor that you enjoy.
- When you are finished, put the cheese mixture in a decorative smaller bowl, and coat the top with the parsley flakes.
- Put in the refrigerator for at least a half hour to chill before serving. I almost always make this cheese ball the night before you will eat it. This allows all of the flavors in the cheese ball to mix, and bring out all of the flavor. Enjoy! This tastes great!

The cheese ball is a stalwart of the Midwest cocktail party, where it can be fashioned from processed Cheddar cheese and port wine, or pineapple and cream cheese. This recipe relies on the leftover ends of good cheese or even just one kind of good-quality, sharp cheese like Gruyère. The idea of adding butter comes from Vivian Howard, the North Carolina chef who features a cheese ball with blue cheese, chopped dates and bacon in her cookbook "Deep Run Roots." She calls hers a party magnet, and indeed, for all of the shade thrown at cheese balls, they are often the first thing to be eaten. They can be served with chutney, jam or simply alongside the best-quality crackers you can find.

- Allow the butter and cheeses to come to room temperature. They should sit out of the refrigerator for at least 30 minutes.
- Put everything except the pecans and parsley in the bowl of a stand mixer fitted with the paddle attachment. Beat until smooth, scraping down the sides of the bowl once or twice. It should take about 4 minutes.
- Plop the mixture onto a piece of waxed paper and gently form into a ball. Place in the refrigerator for at least 15 minutes or until firm enough to work with.
- Mix the pecans and parsley together on a large plate or a cutting board, then roll the cheese ball in the mixture. Cover any surfaces with a sprinkling of the mixture and pat into the sides until you have an evenly coated ball.
- Wrap well in plastic wrap and refrigerate. When ready to serve, let the ball sit out for at least a half hour to soften. Serve with good plain crackers or small toasts.

GARLIC BALLS
I made these balls last night and my daughter, who doesn't eat much bread, ate 6 of these. These are great with any meal, especially Italian dishes.

Steps:
- Preheat oven to 400°F
- Lightly oil a large cookie sheet.
- Roll out the dough on a floured counter and cut into 1" strips. Then cut crosswise 1 1/2" so you end up with a 1 x 1 1/2" square
- Butter the top with melted butter and cover with a clean kitchen towel. Let sit for 1 hour.
- Bake for 13 minutes or until golden on top.
- While balls bake, mince garlic and mash to a paste with salt, then stir together with butter, oil and onion powder and heat on stove (do not boil). Keep the butter mixture warm until the balls are done.
- Immediately after baking, place the balls in a bowl with the melted garlic butter and toss to coat the bread.
- Serve warm.
