Steps:
- Heat oil in small saucepan over medium-high heat. Add onion and sauté until soft, about 5 minutes. Stir in rice. Add broth; bring to boil. Reduce heat to low, cover, and simmer until tender, about 20 minutes. Fluff rice with fork; add pine nuts. Season with salt and pepper.
RICE WITH TOASTED PINE NUTS

Steps:
- Spread pine nuts on baking sheet and bake in oven set at 350 degrees until golden brown. Melt butter in saucepan. Add onion and saute until softened. Add rice and stir until coated with butter. Add water, bring to a boil, cover and reduce heat. Continue to cook until water absorbs and rice is light and fluffy, about 20 minutes. Toss in pine nuts and serve.
ANCHO AND PINE NUT RICE
This is one of my favorite ways to eat rice: spicy and with nuts! The spice from the chiles is perfectly balanced by earthy pine nuts. To cut down on the heat, you can always use one ancho chile instead of two, but I encourage you to try it with two the first time around. You might be surprised at how well the flavors work together. Because they are picked by hand, pine nuts can be expensive. Feel free to substitute chopped or slivered almonds instead.

- Bring the chicken broth to a boil in a medium-size heavy saucepan over high heat. Add the ancho chiles and remove from the heat. Let stand for 15 minutes, or until the chiles soften.
- Transfer the chiles and broth to a blender and puree until smooth. Strain into a 4-cup measuring cup to measure 2 3/4 cups (reserve the remaining puree for another use). Add the milk, salt, and pepper and set aside.
- Melt the butter with the olive oil in a medium saucepan over medium-high heat. Add the onion and garlic and sauté for 3 minutes, or until the onion is translucent. Add the pine nuts and stir for 2 minutes, or until they are golden. Add the rice and stir for 2 minutes, or until it is coated with oil.
- Add the ancho puree and bring to a boil. Cover, reduce the heat to low, and simmer for 20 minutes, or until all the liquid has been absorbed. Remove the pan from the heat and let the rice stand for 5 minutes. Then fluff the rice with a fork and serve.

- Add the olive oil to a saucepan, and then the onion and garlic. Cook over medium heat, stirring, until wilted. Add the rice, raisins and the pine nuts.
- Add the water, salt and pepper. Bring to a boil, stirring; cover, and simmer for exactly 17 minutes.
- Add the butter, stir to fluff the rice, and blend well.

RICE WITH PINE NUTS AND PISTACHIOS
This was a favorite of Thomas Jefferson. His cook was a slave from Africa and created many delicious meals. You could say that Jefferson's cook, Hemings, cooked his way to freedom. In 1793, Jefferson signed a document that emancipated Hemings if he promised to train a new chef for Monticello! Note: you can shortcut this recipe by using fast-cooking rice and adding the browned pistachios and pine nuts in at the end. Delicious either way!

- Rinse the rice under cold water in a colander. Drain. In a saucepan, over high heat, bring the chicken stock, water, 1 T of the butter and 1/2 t of the salt to a boil. Stir in the rice and cover tightly, simmer over very low heat for about 20 minutes, or until the rice is tender and the grains have absorbed all of the liquid.
- In another skillet over medium heat, melt the remaining 2 T of butter. Stir in the pistachios and pine nuts and saute until they are a light golden color. It doesn't take long, make sure you don't burn them! Remove the skillet from the heat.
- Put the cooked rice in a serving bowl and fluff it with a fork. Scrape the nuts over the rice and toss gently. Sprinkle the rice with the mace, if desired.

- In a dry small heavy saucepan toast pine nuts over moderate heat, stirring, until golden, about 5 minutes, and transfer to a small bowl. Finely chop cilantro and reserve 1/4 cup for garnish. Mince garlic. In pan cook rice in oil with garlic and remaining cilantro over moderate heat, stirring, 3 minutes and add water and salt. Bring mixture to a boil and cook, covered, over low heat 15 minutes, or until water is absorbed and rice is tender. Remove pan from heat and let rice stand, covered, 5 minutes.
- Serve rice sprinkled with pine nuts and reserved cilantro.

- In a 1 1/2-quart heavy saucepan cook pine nuts in oil over moderate heat, stirring occasionally, until golden, about 2 minutes. With a slotted spoon transfer pine nuts to a bowl. Add rice to oil in pan and cook over moderately low heat, stirring, 1 minute. Add water and bring to a boil. Cover rice and cook over very low heat until water is absorbed and rice is tender, about 18 minutes. Remove pan from heat and let rice stand, undisturbed, 5 minutes.

- In a medium saucepan, bring the water to a boil. Add rice; season with salt and pepper, and return to a boil. Reduce to a simmer, cover, and cook until rice is tender and has absorbed all liquid, 15 to 17 minutes. Remove from heat and let stand, covered, 5 minutes.
- Fluff rice gently with a fork, then toss with pine nuts, oil, and lemon zest and juice. Season with salt and pepper, and serve.

- Heat the olive oil over medium heat, in an ovenproof pan. Add the garlic, cumin and oregano and cook for a minute. (Don't let garlic brown).

- Soften the shallot with the carrot in the butter in a saucepan. Add rice and two cups chicken stock. Cover and simmer gently. As the liquid dries, add more stock. The rice should take about an hour and is done when it is open and soft.
