BOLOGNA SALAD SANDWICHES

- In a bowl, mix bologna, mayonnaise, relish, onion and Worcestershire sauce. Use about 1/3 cup of the salad for each sandwich, and top with a slice of cheese and lettuce if desired.

BOLOGNA AND CHEESE SALAD
Steps:
- In a small bowl, whisk together oil, vinegar, and lemon juice. Season with salt and pepper and place in refrigerator. Roughly chop all lettuces and place in bowl. Lightly toss in the pine nuts. Heat oil in saute pan over low heat. While oil warms, spread mortadella into individual sheets. Place dollop (little less than an ounce) of Gorgonzola in the center of each slice and fold mortadella up and around the cheese to form a package. Twist once, and insert toothpick to hold bundle in place. Place the packages in the saute pan and cook about 2 minutes until crispy. Flip and cook 2 minutes more. Remove to paper towel lined plate. Keep warm.
- Pour vinaigrette over salad and toss gently with fingertips. Divide salad between 4 places. Place 2 meat parcels on top and crack fresh black pepper over each plate.
MY FAVORITE BOLOGNA OR HAM SALAD FOR SANDWICHES
I grew up only knowing this by Ham Salad which is what my Mom and local Deli's up North called it. She said it was the "Poor Man's Ham Salad" which never contained any ham, just bologna, but giving it the wonderful flavor and color of what could have been ham. We loved it. I made it for my children as they grew up and it is still requested though they are adults now. I am in my 50's and still make it for myself as a snack spread or sandwich. I've seen a variation of recipes for this, tried some and still think mine is my favorite. Let me know what you think?

Steps:
- Do not use Velveeta for this recipe, it does not store well.
- I suggest a food processor for this recipe unless you prefer a meat grinder. Use a large bowl with tight lid for storing.
- Take all the bologna out of the packaging and quarter.
- Unwrap all the cheese slices (if in wrap) and quarter as well.
- Place half the meat and half the cheese in processor and pulse until semi-chunky. It should look spreadable. Scoop in bowl.
- Add remaining bologna and cheese, process.
- Place rest in large bowl and add relish, mix well.
- Add 1/2 of the mayo, stir. You can choose the consistency if you prefer. I like it a bit more mayonnaisy. Add rest if preferred.
- You can use either Miracle Whip or real Mayo, both are great. I like the real mayo because it works better with crackers.
- Serve on either a hamburger bun (kid's favorite), sandwich bread, or club crackers.
- Store remaining spread in fridge, it can last up to one week.

OLD FASHIONED BOLOGNA SALAD
I remember this sandwich spread from when I was a kid. Mom and Dad would buy bulk bologna every time we traveled to Indiana to see family and this was the treat that was made from the ends of the log. Chopped olives, shredded cheese or chopped pickled banana peppers could be added for a different flavor.

Seems like quite a few of us have childhood memories of this salad. I know my mother fixed it often, as she was rearing 7 of us kids! I've changed just one ingredient to make it a little more adult tasting. I use a "knuckle buster" to grate the bologna and cheese, just like mother did!

- If you bought the bologna in one piece, cut into slices (they don't have to be very thin) and depending on how large the slices are, cut them in half.
- Slice up the radishes and pickles as well (I like those thinner sliced and I love using this slicer to achieve quick, even slices). Cut the cheese into strips. Cut the red onion into thin slices and the green onion into rings. Combine all ingredients in a medium sized bowl.
- In a small bowl, whisk together the mustard, jam (or honey), olive oil and pickle juice and season to taste with salt and pepper. If desired, you can add fresh, chopped parsley as well. Add the dressing to the salad ingredients, toss, and serve with fresh slices of rustic bread.
