" BETTER THAN CINNABON" CINNAMON ROLLS

I snagged this off of a website and made my own adjustments. These can be refrigerated overnight after shaping. Let rise about 45 minutes at room temp before baking whether or not you refrigerate.

Steps:

  • Combine warm water, sugar and yeast. Set aside.
  • In microwave, melt butter.
  • When butter is melted, add milk and warm to take the chill off.
  • Add beaten egg and yeast mixture (it should be foamy by now) mix gently and pour into pan of bread machine.
  • Add flour to bread machine pan, one half of the pudding mix and salt.
  • Place pan in machine and allow to complete dough cycle. (If dough is sticky add a 1/4 to a half cup of flour during kneading.
  • When dough cycle is complete, roll out dough to approximately 17"x10".
  • Spread dough evenly with 1/2 cup softened butter and sprinkle with brown sugar and cinnamon.
  • Roll up dough starting with the long side. Cut into approximately 16 even pieces and place in a 9x13 pan (they will be snug)
  • At this point you can cover and refrigerate until the next day or let rise 45 minutes.
  • Bake at 350F for 20 minutes until golden brown on top.
  • Make frosting, beat together cream cheese, butter, powdered sugar, remaining pudding mix and milk to a spreading consistency.
  • Frost rolls after the have cooled slightly.
  • Serve immediately for best results.
  • It is my understanding that this recipe does not freeze well.

ANOTHER CINNABON-TYPE CINNAMON BUN

This recipe is my adaptation of a really good recipe I found on The Gordon Family website. (http://www.gordonfamily.com/Recipes/cinnabon.htm). I adapted the dough recipe a little and use more filling than they recommend but their Cream Cheese Frosting is FAR better than any other I've ever found. I think the secret is in the use of lemon extract as well as vanilla. It creates just the right tartness. They suggest beating the frosting about 10 minutes but I never have and I have made this a thousand times. Everyone I know loves these buns. Hope you enjoy them as much as we do.

Another Cinnabon-Type Cinnamon Bun image

Steps:

  • Using the bread machine instructions, heat the milk to whatever temperature your machine suggests for the dough cycle. Place the dough ingredients into the machine in the order recommended and mix, knead and rise with the dough cycle.
  • Butter a 9" X 13" X 2" pan thoroughly.
  • Once the dough cycle ends, remove the dough from the machine and punch it down on a buttered countertop. Roll out to a large rectangle, about 30" X 15".
  • Warm the butter for the filling to room temperature and spread over the dough evenly. Sprinkle with the brown sugar and the cinnamon, then starting on a long side, roll the dough tightly into a cylinder.
  • Slice the dough into 24 equal slices and place each one cut side down in the prepared pan.
  • Let rise in a warm place, covered, about 30 minutes.
  • Preheat oven to 350º.
  • Bake the buns for about 22-26 minutes or until browned all over but not too dark.
  • While the buns are baking prepare the frosting by combining all ingredients at room temperature and beating very well for 2 or 3 minutes with an electric mixer.
  • Frost the buns in the pan as soon as you remove the pan from the oven. The frosting will melt somewhat into the spaces in between the buns. Cool in the pan and enjoy!

Ooey-Gooey Cinnamon Buns image

Steps:

  • In a small bowl, dissolve 1 teaspoon sugar and yeast in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in 1/4 cup sugar, 1/4 cup butter and salt; stir until melted. Let cool until lukewarm.
  • In a large bowl, combine the yeast mixture, milk mixture, eggs and 1 1/2 cup flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • While dough is rising, melt 3/4 cup butter in a small saucepan over medium heat. Stir in 3/4 cup brown sugar, whisking until smooth. Pour into greased 9x13 inch baking pan. Sprinkle bottom of pan with 1/2 cup pecans; set aside. Melt remaining butter; set aside. Combine remaining 3/4 cup brown sugar, 1/2 cup pecans, and cinnamon; set aside.
  • Turn dough out onto a lightly floured surface, roll into an 18x14 inch rectangle. Brush with 2 tablespoons melted butter, leaving 1/2 inch border uncovered; sprinkle with brown sugar cinnamon mixture. Starting at long side, tightly roll up, pinching seam to seal. Brush with remaining 2 tablespoons butter. With serrated knife, cut into 15 pieces; place cut side down, in prepared pan. Cover and let rise for 1 hour or until doubled in volume. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven for 25 to 30 minutes, until golden brown. Let cool in pan for 3 minutes, then invert onto serving platter. Scrape remaining filling from the pan onto the rolls.

Quick and Easy Cinnamon Buns image

Steps:

  • Melt the butter in a small pan or in a bowl in the microwave.
  • Lightly grease a large baking tray with the extra butter.
  • To make the glaze, mix 3 tablespoons of the melted butter in a bowl with the icing sugar and vanilla paste. Add the boiling water and 2 tablespoons of the buttermilk and stir to combine. Cover and chill.
  • To make the cinnamon filling, mix 3 tablespoons of the melted butter with the cinnamon, mixed spice and both types of sugar. Add a pinch of salt, then stir the mixture together until it resembles wet sand. Set aside.
  • Preheat the oven to 400°F.
  • To make the dough, combine the flour, baking powder and bicarbonate of soda in a mixing bowl and add a generous pinch of salt. Make a well in the middle of the mixture and pour in the remaining melted butter and the rest of the buttermilk. Stir with a rubber spatula until fully combined. The dough might seem dry, but keep stirring until the dry ingredients absorb the wet - the dough will be shaggy, not smooth, at this point.
  • Tip the dough out onto a lightly floured work surface and knead for 3-4 minutes. When ready, the dough will look smooth and have a slight shine, and you will feel it is more elastic. Flour the work surface again and pat the dough out to a rough 20 x 30 cm (8 x 12 in) rectangle. Sprinkle the filling in an even layer over the dough, leaving a rough 1 cm (½ in) border. Press the filling into the dough. Roll up the dough lengthways up as tightly as you can, to form a long sausage shape. Cut into 12 equal pieces.
  • Transfer the buns to the prepared tray, cut-side up, leaving about 2 cm (¾ in) between each. Bake for 20 minutes or until puffed up, golden and sticky. Cool for 30 minutes, then remove the glaze from the refrigerator and spread over the buns. Serve immediately or let the glaze set.
  • Make ahead
  • Make the glaze first and leave it to stand in the refrigerator. As the glaze cools, the butter begins to set and thicken, so it resembles a cream-cheese frosting. Make the buns a day ahead and reheat in the oven without the glaze.
  • The shortcut
  • No yeast translates to 1 ½ hours of your life back. You're welcome. Pat the dough out; don't bother dirtying your rolling pin.

Steps:

  • For the dough, gently heat the milk and butter until the butter has just melted. Leave to cool until just warm to the touch (it shouldn't be hot). Tip the flour into a large bowl with the yeast, cinnamon, sugar and a pinch of salt. Pour in the warm butter and milk mixture along with the egg, then combine with your hands until a dough forms. Tip the dough out onto a floured surface, and knead for about 10 mins until springy. Alternatively, you can do this in a stand mixer fitted with a dough hook - the dough will only require about 5 mins of kneading using this method. Bring the dough together into a ball, then place in an oiled bowl. Cover with a clean tea towel and leave to rise for about 1 hr, or until doubled in size.
  • Meanwhile, beat the filling ingredients with a small pinch of salt using an electric whisk until completely combined. Set aside. Butter a 20cm springform or loose-bottomed cake tin. Tip the dough out onto a lightly floured surface and knead briefly to knock the air out. Leave to rest for a few minutes, then roll out to a 30 x 50cm rectangle, and lay it on the surface so the short edge is facing you. Spread over the filling so the dough rectangle is completely covered. Cut the dough into four strips down the length. Roll the first strip up into a tight spiral from the short end, then place the spiral at the short end of the second strip and roll this up into a spiral around the first. Place this larger spiral at the short end of the third strip and roll up again, then repeat with the final strip of dough. You should end up with one large cinnamon bun. Transfer to the prepared tin, cover with a clean tea towel and leave to rise for 45 mins-1 hr, or until it has risen by about a third.
  • Heat the oven to 200C/180C fan/gas 6. Put the cake tin on a baking tray and bake for 50 mins-1 hr until puffed up, golden and cooked through. Meanwhile, combine the icing sugar, vanilla and 3 tbsp water until you have a loose icing that can be drizzled. Leave the bun to cool in the tin for 10 mins, then remove from the tin, drizzle with the icing and leave to cool completely on a wire rack. Serve in slices, or let everyone pull it apart. Will keep in an airtight container for two days.
