BREAKFAST APPLE CAKE
Baked in a pretty tube pan and drizzled with icing, this breakfast cake will be a highlight of your holiday menu. I adapted the recipe from one of my grandmother's. -Shaunda Wenger, Nibley, Utah

- In a large bowl, beat the egg whites, sugar, sour cream, applesauce and vanilla. Combine the flour, baking soda, baking powder and salt; gradually add to sour cream mixture, beating just until combined., In a large bowl, combine the filling ingredients. Spoon half of the batter into a greased and floured 10-in. fluted tube pan. Top with half of the filling. Repeat layers. , Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; invert pan and remove cake to a wire rack to cool completely. Combine glaze ingredients; drizzle over cake.

I make this cake a lot as it is not overly sweet but is very moist and flavorful. My mother in-law loves this cake so I always make two of them. Stouffers sent me this recipe and a few more along with some coupons lucky me!

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Grease and flour a 13x9x2 baking pan.
- Beat cake mix, eggs, milk and cinnamon in large mixing bowl until just moistened. Beat two minutes at medium speed.
- Fold apples into batter. Pour half the batter into prepared pan. Sprinkle with half the Streusel Topping.
- Top with remaining batter. Sprinkle with remaining Streusel Topping.
- Bake for 40 to 45 minutes or until toothpick inserted in center comes out clean.
- FOR STREUSEL TOPPING:.
- Combine all ingredients in bowl mix well.

- Preheat the oven to 350°F (177°C) and grease a 9×13 inch baking pan or line with parchment paper. Set aside.
- Mix the brown sugar, granulated sugar, cinnamon, and salt together in a medium bowl. Stir in the melted butter. Using a fork, lightly mix in the flour until crumbles form. Don’t overmix.
- Using a handheld or stand mixer fitted with a paddle attachment, beat the butter and granulated sugar together on high speed until smooth and creamy, about 2 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the eggs, sour cream, and the vanilla. Beat on medium-high speed until combined. The mixture may look curdled; that’s ok. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, mix in the dry ingredients until smooth. Do not overmix. The batter will be thick.
