CARAMEL APPLE DESSERT PIZZA

I made a favorite recipe lighter by making my own cookie crust. I used less fat and sugar, and part whole wheat pastry flour. I also used a combination of fat-free and low-fat cream cheese as well as fat-free caramel sauce. My family doesn't notice the difference. -Tari Ambler, Shorewood, Illinois

Caramel Apple Dessert Pizza image

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, oil, corn syrup and vanilla. Combine the flours, baking powder, salt and cinnamon; gradually add to creamed mixture and mix well., Press dough onto a 14-in. pizza pan coated with cooking spray. Bake at 350° for 12-15 minutes or until lightly browned. Cool on a wire rack., In a small bowl, beat the cream cheese, brown sugar, cinnamon and vanilla until smooth. Spread over crust. Arrange apples over the top. Drizzle with caramel topping; sprinkle with peanuts. Serve immediately.,

Steps:

  • Press cookie dough into a greased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown. Cool on a wire rack. Run a large flat spatula under crust to loosen from pan. , In a bowl, beat the cream cheese, peanut butter, brown sugar and milk until smooth. Spread over the cooled crust. In a bowl, combine the apples and soda; drain well. Toss apples with cinnamon; arrange over cream cheese. Drizzle with the caramel topping and sprinkle with pecans. Cut into wedges.

Steps:

  • Heat oven to 375°F.
  • Cover 12-inch pizza pan with foil; spray with cooking spray. Place cookie dough slices in single layer on bottom of prepared pan; press together to completely cover bottom of pan. Bake 14 min.; cool completely.
  • Invert cookie crust onto plate; carefully remove foil. Turn crust over on plate.
  • Beat cream cheese, sugar, peanut butter and vanilla with mixer until blended; spread onto crust. Toss apples with lemon juice; spread over cream cheese mixture.
  • Drizzle with ice cream topping; sprinkle with nuts.

Steps:

  • Preheat oven to 350. On cookie sheet, roll out dough into a large cookie, about 3/4 inch thick. Bake for about 17 minutes or til light brown. Remove from oven and let cool for 10 minutes.
  • In mixing bowl, mix cream cheese, brown sugar, peanut butter and vanilla. Beat with mixer til well blended. Spread mixture evenly over baked cookie pizza.
  • Peel and slice apples. Cut slices into bite size chunks and arrange evenly over the pizza. Microwave caramel topping for about 45 seconds or til warm. Drizzle evenly over apples. Sprinkle pecans over the apples.
  • Cut into wedges and serve at once. Makes 8 servings.

Steps:

  • Heat oven to 400°F. Line 2 cookie sheets with foil or cooking parchment paper. In 1-quart saucepan, heat brown sugar, corn syrup and butter to boiling over medium heat, stirring occasionally. Cook 5 to 7 minutes, stirring constantly, until thickened; remove from heat. Cool about 30 minutes. Stir in whipping cream and rum extract.
  • In medium bowl, mix apples and lemon juice. Stir in granulated sugar, cinnamon and nutmeg.
  • In small bowl, beat cream cheese with electric mixer on medium speed until fluffy. Beat in egg and vanilla on medium speed until blended.
  • Roll each sheet of pastry into 10-inch square on foil-lined cookie sheet. Cut each pastry square into 10-inch circle. Place scraps in center; roll into pastry.
  • Spread half of cream cheese mixture over each pastry round. Arrange apple slices on cream cheese. Sprinkle with nuts. Drizzle about 1/4 cup caramel syrup over each pizza.
  • Bake 25 to 30 minutes or until puffy and golden brown. Pour remaining caramel syrup over hot pizzas. Serve warm.
