- In a small pot, combine the water and sugar and bring to a gentle boil over medium heat. Set aside to cool.
- Place the apples on a flat surface. Using a mandoline or sharp knife, cut each one, placing the core end of the apple in front of the blade, into rounds as thin as you can manage. Remove any seeds as you cut and sprinkle them with lemon juice. Submerge the apple slices in the syrup and allow them to "rest" for a few hours or, even better, overnight.
- Preheat the oven to 200 degrees F.
- Remove some of the apples from the syrup and lightly dry them on a kitchen towel. Place them in a single layer on a baking sheet with parchment or on a tray fitted with a baking rack. Note: you may want to place something heavy, like a metal spoon, at each end of the paper to prevent the paper from folding over as the chips bake. Bake in the oven until crispy, about 1 hour.

- Place racks in the upper and lower thirds of your oven and preheat your oven to 200 degrees F. Line two baking sheets with parchment paper or a silpat mat.
- Wash the apples. With an apple corer, very small cookie cutter, or the round side of a metal piping tip, core the apples (you can also skip this step if you don't mind a few seeds in the chips). With a mandolin (recommended) or a very sharp knife, slice the apples horizontally into 1/8 inch-thick rounds.
- Arrange the apples in a single layer on the prepared baking sheets. Sprinkle with cinnamon. Bake for 1 hour in the upper and lower thirds of the oven. Remove the baking sheets and switch the pans' position on the upper and lower racks. Continue baking for 1 to 1 1/2 additional hours, until a single apple chip removed from the oven is crisp when set out at room temperature for 2 to 3 minutes (to test the apple chips, remove a single apple slice but let the others continue baking). Once you are happy with the crispness (the total time will vary based on the thickness of your slice and the type of apple), turn off the oven and let the apples sit in the oven for 1 hour as it cools down to crisp further (unless you fear you overcooked them, in which case remove the pan immediately and let it sit at room temperature).

- Preheat oven to 225 degrees. Line a baking sheet with parchment paper. Cut the apples crosswise into thin rounds about 1/8 inch thick. Don’t worry about removing the seeds; they’ll shrivel up and fall out as they cook.
- Toss the apple slices in the lemon juice and sprinkle the cinnamon over top and toss to coat. Lay the apples in a single layer on the baking sheet. It is ok if they are very close together.
- Bake for 2 hours, rotating the baking sheets halfway through. (Move the baking sheet on the top rack to the bottom and the bottom one to the top.)
- Remove one apple chip from the oven and let it cool for 5 minutes. If it is crisp, remove all the apple chips. If not, put it back into the oven until they are crisp. Check on them every 15 mintues. The total time will vary depending on what kind of apples you use and how thin they’re sliced.
