APPLE CHEESE DANISH

This is a great recipe and looks like it came from a professional bakery. It isn't hard--just a little time-consuming.

Apple Cheese Danish image

Steps:

  • Place the cottage cheese in a strainer lined with cheesecloth or heavy-duty paper towels. Pat dry with paper towels and set aside for 5 to 10 minutes.
  • Place apples in a bowl, and sprinkle with lemon juice to prevent browning.
  • Combine the cream cheese, drained cottage cheese, 1/2 cup sugar, egg, and vanilla extract in the bowl of an electric mixer, and mix 1 to 2 minutes on high speed, until almost smooth.
  • Preheat an oven to 400 degrees F (200 degrees C). Line two baking sheets with parchment paper.
  • Cut each of the puff pastry sheets into 9 pieces; you should have 18 total. Roll the pieces out, one at a time, to make 5 x 5-inch squares. To ensure the pastries puff up, avoid using too much pressure or rolling over the edges of the dough.
  • Place a square in front of you so that it looks like a diamond. Spoon a generous amount of cheese filling down the middle of each square, leaving 1/4 inch of room at the top and bottom edges. Fan out 4-5 slices of apple down the center of each cheese-filled square. Bring the left and right corners together to meet in the center and pinch to seal.
  • Transfer the Danish to a baking sheet and repeat with the remaining pastries. Sprinkle sugar over each bundle and bake in the preheated oven until the pastry is golden brown, about 20 minutes.

Nickie, my boss, made this cheesecake and brought to work. Everyone raved about it, and it is to die for! I know of no one who does not like it, although it may not be so beautiful to look at.

Nickie's Apple-Pecan Cheesecake image

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a 9x13 inch baking dish with aluminum foil, extending the foil sheets over the side of the dish.
  • To make the crust, mix the graham cracker crumbs, butter, and 2 tablespoons brown sugar together in a bowl until evenly blended. Press evenly over the bottom of the prepared baking dish.
  • To make the filling, beat the cream cheese, 1 cup brown sugar, and vanilla together in a mixing bowl until evenly blended. Beat in the sour cream. On low speed, add the eggs, one at a time, just until blended. Pour the mixture over the crust.
  • To make the topping, place the apples in a bowl, and toss with 1/2 cup brown sugar, pecans, and cinnamon until evenly blended.
  • Bake in preheated oven until center is almost set, about 55 minutes. Cool, and refrigerate 4 hours, or overnight.
  • Before cutting, allow the cheesecake to sit 30 minutes at room temperature, then lift from the baking dish using the extended aluminum foil sheets, and place on a cutting board or serving plate. Remove the aluminum foil, and cut into 16 squares.

  • In a bowl, combine flour and salt; cut in shortening until mixture resembles coarse crumbs. Combine egg yolk and milk; add to flour mixture. Stir just until dough clings together. Divide dough in half. , On a lightly floured surface, roll half of dough into a 15x10-in. rectangle; transfer to a greased 15x10x1-in. baking pan. Set aside. , In a bowl, toss together filling ingredients; spoon over pastry in pan. Roll out remaining dough into another 15x10-in. rectangle. Place over filling. Brush with egg white. Bake at 375° for 40 minutes or until golden brown. Cool on a wire rack. , For glaze, combine the confectioners' sugar and enough water to achieve a drizzling consistency. Drizzle over warm pastry. I saw this on a food blog and wanted to make it. What better way to change the ingredients to American measure than recipezaar? I haven't made it yet, but I'll assume it's not as sweet as American cheesecakes.

Steps:

  • Preheat the oven to 350 degrees f. Line the bottom of a 9-inch springform pan with parchment paper before locking the pan. Lightly grease.
  • Whisk flour, baking powder and salt together and set aside.
  • Cream the sugar and butter until light and fluffy. Add the egg and mix well. Add vanilla sugar or extract if you prefer. At low speed, mix in the flour, followed by the milk until fully mixed.
  • Pour the batter into the pan and bake ten minutes. Prepare the next layer.
  • Whip the cream cheese and sugar until light and fluffy. Beat in the egg. Stir in the zest if using berries. Set aside.
  • Toss the fruit with cornstarch and sugar. Layer the fruit on the just-baked cake. Pour the cream cheese mixture on top.
  • Bake at 350 degrees for 40 minutes or until a toothpick comes out clean.
  • *You can use two thinly sliced apples or pears if you prefer.
