APPLE CINNAMON CROCK POT POTPOURRI
After reading many different crock pot potpourri recipes I came up with this one, and my house smells wonderful! :) If you don't have a small crock pot, just use a sauce pan and simmer on your stove. These are fun to throw together because you can use what ever you want to create the scent you want and you can't really mess up. I used the spices sold in the cellophane bag, they are very inexpensive and are usually in the Hispanic section of the grocery store.

NO PIE APPLE PIE

- For the apple pie spice: Mix together the cinnamon, nutmeg, allspice and cardamom if using in a small bowl.
- For the apples: Preheat the oven to 400 degrees F.
- Place the apple halves core-side down on a flat surface. Before slicing, place chopsticks or wooden spoons on either side of them to make sure you don't cut all the way through. Slice almost all the way to the bottom of each apple half at 1/4-inch intervals, then place them on a sheet pan.
- Mix 1 tablespoon of the butter, 1 tablespoon of the brown sugar, 2 teaspoons of the apple pie spice and the orange juice in a pitcher. Drizzle over the apples, making sure they are well coated and the drizzle goes into the slits. Bake until they are just starting to get tender, about 15 minutes.
- Meanwhile, mix together the oats, almonds, salt, remaining melted butter, remaining brown sugar, orange zest and remaining apple pie spice. Sprinkle the oat mixture over the apples, making sure to get some between the slices without breaking the apples. Bake until the topping is slightly crisp and golden, another 10 minutes. Drizzle with honey and serve with ice cream.

Instead of throwing out your orange peels, put them to good use in your crock pot! I love how this mixture of orange peels and spices fills my home with a warm, inviting aroma. Making your own potpourri can't get any easier than this! Even better--it's non-toxic!

- In a small bowl whisk together cornstarch, cinnamon, and 1/3 cup of the apple juice concentrate. Set aside.

- Roll out pastry and set aside. Bring water to a boil in a large saucepan.
- In a small bowl mix together sugar and cream of tartar. Add mixture to boiling water. Stir, then add crackers, one at a time. Boil for 3 minutes, but do not stir.

- Dried Apple Slices: Preheat your oven to 150 degrees.
- Slice the unpeeled apple in very thin slices and lay in a single layer on a baking sheet sprayed lightly with vegetable oil spray and bake for 30 minutes.
- You can sprinkle a little cinnamon on top to make these cinnamon dried apples.
- Let the dried apple cool for about ten minutes before adding to the other ingredients.
- In a lidded glass jar (a Mason jar is perfect) combine all of the ingredients of the potpourri mixture, and gently combine with a wooden spoon.
- Cover tightly.
- This mixture will keep for months.
- To use, place about a tablespoon into 2 cups of boiling water.
- Turn down the heat and let the mixture simmer gently to release all of the wonderful apple pie scent!
APPLE PIE WITH NO APPLES
This recipe is one that my mother, grandmother and great grandmother made. I thought it had been lost when my mother died. Imagine my surprise when I found it written on the inside of her favorite cookbook, which I inherited. I had no idea whether or not it would taste as good as my childhood memories when I made it. It does. One can use either pre-made unbaked pie shells and/or crusts, or homemade. I used a pre-made, unbaked shell and then cut up a premade (boxed) unbaked crust for the lattice top. The extra pie crust I sprinkled with sugar and baked along with the pie. I remember the "pie crust cookies" from my childhood too. This pie has the taste and texture of a real apple pie, and it's a lot of fun to see the expressions when it's revealed that the 'secret ingredient' is Ritz crackers. It's a quick and easy recipe that tastes good.

- Cook over medium heat until sugar dissolves.
- Add Ritz crackers.
- Bring to a hard boil for 2 minutes.
