APPLE RUM RAISIN CAKE (GLUTEN-FREE, LOW-GI)

I used a gugelhupf pan here, but you can just use a round 7-inch cake pan. If you'd like to lower the glycemic index, you can omit raisins and replace coconut sugar with erythritol or xylitol. This cake is pretty moist and does crumble a little when you slice it, so please don't make the batter too loose by adding too much applesauce. Apple Rum Raisin Cake (Gluten-Free, Low-GI) image

Steps:

  • In a small sauce pan, place apple pieces, lemon juice, raisins, sugar, cinnamon, and water and cook under medium heat for about 10 minutes until the apples become soft.
  • Add rum and mix. Turn off heat and set it aside.
  • Preheat oven to 350ºF/180ºC degrees and spray the cake pan with oil.
  • In a bowl, combine almond meal, coconut flour, sugar, and baking powder.
  • Add beaten eggs, melted butter, apple sauce, and almond extract and mix.
  • Add the apple and raisin mixture and walnut pieces (if using) and mix.
  • Bake for about 40 minutes.
  • When the cake is no longer hot, remove from the pan and cool on a wire rack. Dust with powdered sugar (optional).
  • Infuse love, slice and serve.

Steps:

  • In a medium bowl, mix the apples and sugar. Let stand about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 10x15 inch baking pans.
  • Stir the water into the bowl with apples. Blend eggs and margarine in a small bowl, and mix with the apples. Mix in the flour, baking soda, cinnamon, and salt. Stir in the raisins and walnuts. Transfer to the prepared pans.
  • Bake 1 hour in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool slightly before turning out of pans.

Steps:

  • Line bottom of a 9-inch springform pan with parchment paper; butter parchment paper and sides of pan.
  • Set a rack in the middle of the oven; preheat oven to 350°.
  • Combine all the filling ingredients in a bowl (glass or stainless); let stand while you prepare the batter.
  • In another bowl, combine the flour, baking powder, and salt; mix well and set aside.
  • In the bowl of a heavy-duty mixer fitted with the paddle attachment, beat the butter and sugar on medium speed for 5 minutes, until light and fluffy.
  • Beat in the eggs one at a time, beating until smooth after each addition.
  • Beat in vanilla; using a rubber spatula, fold in half the flour mixture.
  • Drain the apples in a colander set over a bowl; add the milk to any rum that drains into the bowl and stir the liquids into the batter, then fold in the remaining flour mixture.
  • Spread half the cake batter evenly in the prepared pan; scatter with the sliced apple mixture.
  • Scrape remaining batter onto the filling and smooth out.
  • Slide a foil-lined cookie sheet onto the rack below the middle one to catch any drips.
  • Bake for 55-65 minutes or until cake is risen, firm, and deep golden and the apples are cooked through and tender.
  • Let cake cool in pan for 15 minutes, then loosen the cake by running a sharp paring knife around the inside of the pan, scraping the knife against the pan, not the cake.

  • Rewarm the glaze if necessary and drizzle another series of lines on a diagonal to the first ones.

  • Place all the raisins in a small bowl with the rum and let sit overnight or at least 4 hours.
  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch baking pan.
  • In a large bowl, beat butter and sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time; mix in applesauce.

Steps:

  • Lightly spray cake tin (round or square medium size) with spray vegetable oil. Preheat oven to 180 degrees celsius (moderate heat).
  • Cake: Combine in a bowl all dry ingredients (flour, oats, brown sugar, baking powder and baking soda, nutmeg, cinnamon, salt).
  • Combine in a small separate bowl yogurt and olive oil, then add to dry ingredients.
  • Add apple juice and eggs and beat until combined, then fold in the apples.
  • Spoon mixture into prepared cake tin.

  • Preheat oven to 350 degrees. Line a medium (8- by 4- by 2½-inch) loaf pan with parchment. Use enough parchment to create a 3-inch overhang so that the cake can be lifted out of the pan once baked.
  • Place raisins in a small bowl. Cover with boiling water. Let sit a minute or two, then drain. Bring 2 tablespoons rum to a boil and pour over raisins. Set aside to macerate while you prepare the batter.
  • Use an electric mixer to whip butter until smooth. Pour in 1 cup confectioners’ sugar, a bit at a time, and continue to beat until mixture is pale and creamy.
  • Place a sieve over a separate mixing bowl and sift in flour, salt and baking powder. Use a rubber spatula to gently but decisively fold flour mixture into egg mixture.
  • Bake the cake until a knife inserted into the center comes out clean, 50-60 minutes. Remove from oven, but do not remove cake from pan. Brush top of cake with warm apricot jam.
