Steps:

  • In a small saucepan, bring 2 tablespoons of the apple juice just to a simmer and remove from the heat. Add the currants, stir, and let them sit for 10 minutes to swell. Preheat the oven to 350 degrees.
  • In a bowl, stir together the apricot jam, almonds, and brown sugar. Add the currants with their juice and mix together well. Use this mixture to stuff the apples. Place them in a small roasting pan and place a dab of butter on the top of each. Pour the remaining 1 cup of apple juice into the pan and bake for 50 to 60 minutes, or until tender but not split or mushy. Serve hot, with a dollop of Crema, if desired.
  • Whisk the cream and the buttermilk together in a bowl. Cover and set in a warm place (a gas oven with just the heat from the pilot light is fine) for 8 hours. Crema may be kept in the refrigerator for as long as a week.

1 cup plus 2 tablespoons unfiltered apple juice
2 tablespoons currants
2 tablespoons apricot jam
2 tablespoons toasted chopped almonds
1 tablespoon light brown sugar
2 tablespoons unsalted butter
6 medium apples, cored 2/3 of the way down and the top 1/3 peeled
Crema, for serving (optional), recipe follows
2 cups heavy cream
1/4 cup buttermilk

Steps:

  • In a small bowl combine well the apricots, the walnuts, the brown sugar, and the butter. Core the apples, making each opening large enough to hold half the apricot mixture, peel the top third of each apple, and fill the cavities with the apricot mixture. Arrange the apples in a deep 2 1/2-quart microwave-safe baking dish so that they do not touch one another or the sides of the dish, pour the orange juice around them, and microwave the apples, covered with microwave-safe plastic wrap, on high power (100%) for 7 minutes. Pierce the plastic wrap with the tip of a sharp knife and let the apples stand, covered, for 5 minutes, or until they are tender.

1/4 cup firmly packed dried apricots, chopped
1/4 cup chopped walnuts
1/4 cup firmly packed light brown sugar
1 tablespoon unsalted butter, softened
2 Granny Smith apples
1/4 cup fresh orange juice

  • Carefully core the apples by cutting around the top stem and removing all but the bottom ½-inch of the core (if you remove the entire core, the filling will fall out).
  • Remove the top one-third of the skin by scoring a line around the entire apple, then peeling away the skin. Rub the exposed flesh with the lemon to prevent it from browning. Repeat the process with the second apple.
  • Place the prepared apples in individual baking dishes or in one larger baking dish (if using individual dishes, place them on a sheet tray for easier handling). Combine the dried cranberries, chopped walnuts, dark brown sugar and cinnamon in a small bowl, then fill each cored apple by packing it firmly with half of the mixture. Top each apple with a pat of butter.
