This is a wonderful hot-sweet appetizer that guests always love -- much to their surprise! It's great for all occasions, winter and summer. You can adjust the ingredients based on whether you like it more hot or more sweet, and you can make sugar free, fat free versions, too! I got this recipe from my mother, and it's been a family favorite for years! If you do not have time to let the apricot mixture chill overnight, it will still taste delicious served immediately. Serve with your favorite crackers.

- In a medium-size bowl, combine apricot preserves, horseradish, mustard and black pepper. Taste the mixture and add more horseradish, mustard, and pepper to taste. Cover and chill this mixture overnight.
- When ready to serve, place the cream cheese on a serving plate and pour the apricot mixture over the cream cheese. Serve with a basket of your favorite crackers.

APRICOT - HORSERADISH SALMON
Slightly tangy way to make a perfectly moist and flavorful salmon. This recipe came from Wegmans supermarket. The original recipe calls for Wegmans Triple Fruit Spread (Apricot, Peach, Passion Fruit)but if you don't have that, just use apricot.

Steps:
- Preheat grill on HIGH 10 minutes.
- Combine fruit spread, pepper and horseradish sauce in bowl, set aside.
- Brush tops of salmon with mixture.
- Turn grill to medium heat. Place skin side down onto lightly oiled grill (DO NOT turn).
- Cook 12 -15 minutes until internal temp is 130 degrees. Remove salmon, leaving the skin on the grill.
- CEDAR PLANK OPTION: soak cedar plank 1 hour in water. Place salmon on plank, and put into grill, close cover and cook as above.

APRICOT HORSERADISH SPREAD
Ultra easy and yet impressive. Apricots and horseradish aren't an everyday combination, folks will notice. (I got this recipe from attending a party a number of years back and noticing!) I suggest adjusting preserve and horseradish amounts to your personal taste. You can sneak a taste as you are mixing.

- Combine preserves and horseradish in a small bowl and whisk until smooth. (Adjust horseradish to taste, depending on how much bite you like.).
- Whisk in the lime (or lemon) juice and salt and pepper to taste.
- Serve with crackers, especially nice with "Ritz" style or Pepperidge Farm butter crackers. This will keep several weeks, refrigerated in non-metallic container.
